Indonesian Corn Fritters

Galangal is a root that looks like ginger but has a sweet, perfumed taste. Find it fresh (the best choice), frozen, or powdered in Asian markets or gourmet food stores. The citrusy herb lemongrass can be grown from a store-bought stalk; place it in water on the windowsill until it sprouts before transferring it to a pot with soil. These rich fritters need a sweet, tangy sauce; if you don’t have time to make Tamarind Ketchup as the recipe calls for, use the simple Cilantro-Jalapeño Sauce (page 184), or whisk store-bought ketchup with honey, lime juice, and salt.

Smoked Farmed Trout Purée with Cherry Tomatoes

A fresh take on the deli favorite, smoked whitefish salad, this version is full of herbs and dressed up by sweet cherry tomatoes. Smoked fish is salty, so you may not need to salt the purée. The fillets contain tiny bones, but as a general rule, the smallest ones are soft and edible. Rainbow or golden trout farmed in the United States is a recommended seafood choice because unlike many carnivorous farmed fish—which eat more protein than they provide to humans—trout efficiently convert their feed into protein. What’s more, rainbow and golden trout are mostly farm-raised in tanks, so there is little risk of them contaminating wild populations.

Watermelon, Apple, and Lime Shake

This drink is best in the summertime, when watermelons are at their sweetest and most flavorful. For cooling off and rehydrating on a hot day, there is simply nothing better. Because watermelons are huge, relatively inexpensive, and have a high water content, they make a good base for drinks. Experiment with using different varieties of tart and sweet apples.

Carob Pudding

I usually advise people not to compare carob to chocolate because the two tastes are quite distinct. But in this rich pudding, you may find that you like carob even better than chocolate. Originally from the Mediterranean, carob was brought to the United States by Spanish missionaries. It grows in the drier parts of the west, including Arizona and California, so it doesn’t have to make the same long, fuel-guzzling trip to us that its tropical nemesis chocolate does.

Eggs and New Potatoes with Green Olive Pesto

This is a cross between an egg salad and a potato salad, two classic warm-weather dishes that usually rely on mayonnaise for flavor and binding. In this recipe, the creamy texture of the new potatoes pulls the ingredients together, and the nut-and-olive pesto imparts a rich taste. A traditional basil pesto works just as well. Because their skin is thin and delicate, there is no need to peel new potatoes; simply wash them thoroughly. This healthy salad can be eaten in sandwiches or with lightly dressed lettuce greens.

Stinging Nettle Pesto with Seared Scallops

Nettles—weeds that grow throughout the United States—are like something out of a scary children’s story. Their leaves are serrated like teeth and they’re covered with spiky hairs that sting on contact. But the sting is fleeting, and the antidote is the juice of the nettles’ own leaves. Boiled briefly, nettles turn into a rich green vegetable much like spinach. Farmed bay scallops are a good seafood choice because they don’t require antibiotics or other chemical treatment and they clean the surrounding water by filtering out matter.

Mediterranean Shepherd’s Pie

This rustic dish makes a wonderful cold-weather meal when paired with a green salad. Instead of the usual white top made of potatoes, this shepherd’s pie gets a toasted orange hue from winter squash, a common ingredient in Greek and Italian cuisine. You can substitute pumpkin, red kuri squash, or kabocha squash for the butternut. Gremolata, a fresh Italian condiment of parsley, lemon zest, and garlic, adds a bright citrus note.

Bittersweet Chocolate Cake with Prune Purée and Hazelnuts

After my company catered a party spotlighting foods from the state of Oregon, we were left with several pounds of fresh hazelnuts from the Willamette Valley, the capital of U.S. hazelnut production. We added the nuts to a flourless chocolate cake, and the result was this dark, rich confection with fruity undertones. Maple sugar, which is simply dehydrated maple syrup, is sold at most health food stores, but you may substitute any dry sugar. Serve this cake with vanilla-spiked whipped cream.

Black Walnut Tea Cake

Foragers prize black walnuts for their rich taste. Scientists study them because they contain the compound limonene, believed to have anti-cancer properties. Remarkably, one botanist has suggested that limonene inhaled from black walnut trees could help prevent cancer. Removing the hull and extracting the meat is challenging; crushing the nuts under a car tire is a popular method. If you can’t find the real thing, use regular walnuts instead. Enjoy this mildly sweet cake with tea or coffee.

Grape and Ginger–Glazed Chicken

Fresh local grapes are an uncelebrated fall fruit, mostly because of their chewy skin and intrusive seeds. But grapes that aren’t ideal for snacking can be more fragrant and sweet than table grapes, and their acidity balances pleasingly with rich roasted chicken. Choose from any white, green, or red variety that’s native to your region. Depending on their sweetness, adjust the amount of honey in the recipe. You may use bottled, unsweetened white grape juice instead of fresh grapes. For a comforting cold-weather meal, serve with Watercress Mashed Potatoes (page 185) and Sweet Potato and Cranberry Cornmeal Biscuits (page 189).

Ginkgo Nut Dumplings with Simple Dipping Sauce

Ginkgos are infamous for the acrid smell of their fruit, but the nuts hidden inside are a treasured ingredient in Asian cuisine. In and around the Chinatown neighborhoods of many cities, you can find people under trees collecting the nuts in autumn. Go out and join them, but be sure to wear protective gloves when touching the fruit and extracting the nuts; otherwise, the smell will remain on your hands. Remove the flesh outdoors—the less you bring into your home the better. You can find canned or dried ginkgos in Asian grocery stores.

Chickpea Cakes

Serve these fragrant Indian-spiced cakes with sweet and tangy Cilantro-Jalapeño Sauce (page 184) to set off their flavor, and Cucumber Yogurt (page 184) for a creamy contrast. For a hearty lunch, perch a few cakes on top of a green salad, or pack them into a pita pocket along with shredded vegetables.

Shrimp Shumai

Shumai is a Chinese import that’s a popular dish in casual restaurants, and is also a staple of Japanese homes, where it’s enjoyed as a snack or a dinnertime side dish (but never as the main course). Leftovers hold up well and can be polished off the next day, or packed into a lunchbox or picnic basket and eaten at room temperature. You can also freeze uncooked shumai for up to a month. Follow the instructions below to steam frozen shumai—no need to defrost; simply add a couple of minutes to the cooking time.

Creamy Blue Cheese Dressing

Roquefort is a blue-veined, smooth, and creamy French sheep’s milk cheese with a strong smell and very pronounced flavor. It is one of the oldest known cheeses, having been produced in the south of France for almost two thousand years. Only cheeses made according to specific standards of production and matured in caves near the village of Roquefort, France, may be called Roquefort. Similar blue cheeses to try in this dressing include American Maytag Blue, a regional cheese from South Carolina known as Clemson Blue, English Stilton, and Italian Gorgonzola. Try this on green salad, with chicken wings, or with raw or blanched vegetables as a great crudité dip.

Vidalia Honey Mustard Dressing

The secret to a creamy, emulsified dressing or vinaigrette is mustard. You’ve probably noticed that when you combine oil and vinegar in a bowl they form separate layers. If you whisk the mixture it will combine only for a brief period, then separate out again. Mustard helps thicken liquid sauces by absorbing some of the liquid and allows the suspension of one liquid in another. Try this savory-sweet combination over crisp salad greens or buttercup lettuce or as a dipping sauce for the Oven-fried Chicken Breasts with Pecan Crust (page 102). If Vidalias are unavailable, use another sweet onion, such as Walla Walla or Texas Sweet.

Mayonnaise

Mayonnaise is a subject of much debate in the South. I’ve even heard rumors about a veritable barroom-type brawl between chefs at the Southern Foodways Symposium in Oxford, Mississippi, that rose out of a discussion of Duke’s versus Hellmann’s. I grew up on Duke’s mayonnaise and strongly believe that if it’s not homemade, it’s got to be Duke’s! This recipe uses raw eggs. Pregnant women, young children, the elderly, or anyone whose health or immune system is compromised should not consume raw eggs. Otherwise, for healthy adults, homemade mayonnaise is fine.

Pecan-Basil Pistou

Pistou is the French version of pesto. As in Italy, it’s used with pasta or dolloped on soups or stews for additional flavoring. Make this sauce when herbs are plentiful, and freeze some for later. I like to freeze it in ice-cube trays; once the cubes are frozen solid, I transfer them to a sealable freezer bag or an airtight container and freeze for up to 1 month. Pine nuts are traditional, and walnuts are a good choice for a delicious hint of bitterness. But pecans give the sauce a rich, buttery flavor. Try it also with other herbs—parsley, cilantro, or even nasturtium leaves for a little spicy kick.

Georgia Peach Soufflés

Each summer, any peaches that were not eaten, jellied, or canned were frozen. We would peel and slice the peaches and pack them into sealable plastic freezer bags. Most often, they later appeared as a topping for Meme’s Pound Cake (page 266). For a child, peach season was purgatory—it was so very hot—but I am sure Meme is smiling in heaven with satisfaction when she sees me practicing now what she taught me then. This soufflé uses the meringue method to rise, and the flavor is delicate and light. Frozen peaches may be used when peaches are not in season; simply defrost them before using.

Lemon Squares

When I was older, Meme and Dede would travel to Florida in the winter and stay near a citrus farm. They would return with bulging sacks of oranges, lemons, and grapefruit. I know Dede enjoyed the trip, but I sometimes wondered about Meme. She must have been in her eighties when she derisively commented, “There’s nothing but old people in Florida.” Citrus fruit has a strong presence in Southern cooking. Lemons and other citrus from Florida and the Caribbean were used in Southern cooking as early as the Colonial period. A recipe for lemon pudding appeared in Mary Randolph’s 1824 cookbook, The Virginia Housewife, the first regional cookbook published in America. Lemon meringue pie holds a special place in people’s memories, as do lemon curd and lemon squares like these. Store these bars tightly wrapped in the refrigerator for up to 3 days.
