Smoke-Roasted Apples with Japanese Sweet Bean Paste

His name is Kumahachi Moreno and he's one of the most famous television chefs in Japan. He showed up at my door one July 4th weekend bearing a bag of Japanese "mystery" ingredients for me to grill. My efforts would be videotaped and the results shown on Japanese television. Seemed like a good idea, but when Moreno opened his bag, out came gobo (burdock root), natto (fermented soybeans), uncooked cod roe, and flat painted cans of azuki (sweet red bean) paste. Decidedly not what most Americans are accustomed to grilling. I sliced the cod roe over freshly-shucked oysters, which I roasted on a wood-burning grill. The burdock went on bamboo skewers with scallions to be grilled yakitori style on a hibachi. The natto went on tortillas with jalapeños and grated cheddar to make grilled quesadillas. I spooned the azuki paste into hollowed out apples—Fujis, no less—and topped them with cream cheese, brown sugar, and butter to be smoke-roasted over applewood in a kettle grill. I held my breath and hoped for the best. Mr. Moreno and his Japanese film crew had never seen the likes of the meal that followed. The oysters came out great, served with wasabi-flavored whipped cream. The film crew ate the natto-stuffed quesadillas with gusto. A mouthful of the fibrous burdock root taught me why burdock is never grilled in Japan. The red bean paste–stuffed apples—the outside tender and smoky, the filling both piquant and sweet—promopted high-fives all around—definitely a first on both sides of the Pacific.

Not to be confused with the annual Gaelic Gourmet events in Boston since the year 2000, Marty Lynch and Kevin O'Grady's Gaelic Gourmet BBQ Team has been burning sticks and wowing barbeque judges since the early 1980s. When Marty gave Ardie [Davis] a taste of CAM Onions at the 2008 Great American Barbecue, Ardie said, "You've gotta give me your recipe for the next KCBS cookbook!" Marty gladly obliged. He adapted this from Rick Browne's Oz Onion Pudding in Rick's Grilling America book (2003). Rick gave us permission to share this version, tweaked by Carolyn Wells, Amy Winn, and Marty Lynch—hence the CAM acronym.

It's not only nostalgia that makes me love arepas; it's also their versatility! These corncakes are hugely popular in many forms in my native Colombia and neighboring Venezuela (among other places) and have now actually caught on in many parts of the United States. What makes them especially wonderful is that they offer cooks fabulous flexibility as far as preparation. So here I'm giving you my basic recipe—and a serving suggestion—but please know you can add whatever you'd like (grilled corn, diced peppers, different cheeses, just to name a few possibilities). Here I'm suggesting that you smear a bit of farmer's cheese—or Mexican queso blanco—on top. Great as an appetizer, these arepas are perfect with any cocktail!

Persimmon Cake with Cream Cheese Icing

If you're lucky enough to have a persimmon tree, you're guaranteed to have plenty of gorgeous persimmons come autumn. Or, if you have a neighbor with one, you're bound to find a bag of persimmons on your doorstep one fall day. The prolific trees are especially striking when the leaves drop and the traffic-stopping bright-orange orbs are still clinging to the bare, gnarled branches, silhouetted against a clear autumn sky. Even if you don't have a tree, or a neighboring one that you can benefit from, you might have seen persimmons at the market. Most likely they were Hachiya persimmons, the most common, elongated-shape variety. It's the one I recommend for this cake. They must be squishy soft before they can be used. If you buy them rock-hard, leave them at room temperature until they feel like water balloons ready to burst. When ready, yank off the stem, slice each persimmon in half, then scoop out the jellylike pulp and purée it in a blender or food processor.

Mushroom, Rajas, and Corn Taco with Queso Fresco

The earliest Mexican cuisine was vegetable-based, so in times past, before Spanish beef, chicken, and pork worked their way into every taco, there were no doubt plenty of satisfying vegetable taco recipes. Today most vegetables are consumed as salsas, in soups, or stuffed into quesadillas and empanadas, but there's no reason why a vegetable taco shouldn't be every bit as tasty and unusual as any other. This sumptuous vegetarian feast is based on the classic combination of roasted poblano chiles and mushrooms, with the addition of corn and mild-flavored, soft queso fresco. This taco is often favored by even the most committed carnivores. In other seasons, bits of diced cooked sweet potato, zucchini, chayote, squash blossoms, or golden winter squash would be welcome additions. Fresh epazote, used as a flavoring in this taco, has a minty-oregano taste and is often available at Mexican markets. (It is also hardy and easy to grow.) Fresh or dried mint or Mexican oregano may be substituted, but do not substitute dried epazote.

Fresh Goat Cheese, Roasted Beet, and Walnut Tart

As the tart bakes, some of the beet juice will color the custard and the goat cheese, giving each slice a pretty, almost marbleized look. Since the flavors are a riff on the classic beet, walnut, and goat cheese salad, this tart pairs especially well with greens tossed with a bright vinaigrette. A small slice also makes a somewhat unusual but delicious side dish to grilled lamb chops.

What makes this Mexican classic special is the Pico de Gallo, a fresh, chunky salsa that also can be used as a dip for vegetables, alongside grilled meats, and to garnish tacos. Cotija is a salty Mexican cheese that is also called queso añejo. It’s fine to use canned chipotles, which are actually dried, smoked jalapeños, for this dish. If you’re using dried chipotles, cover them with boiling water, let them sit for an hour, remove the stems and seeds, and purée in a food processor or blender. Discard the soaking liquid. Serve with a pitcher of Sangría (page 248).

The trick to its success is to cook everything slowly so that the flavors really deepen and sweeten.

I understand why Brussels sprouts top the list of detested vegetables for many people. When they are large, old, or overcooked, they tend to have an obnoxious, barnyardy flavor that some people are sensitive to whereas others are not. You can minimize this by choosing smaller, fresh-looking sprouts and cooking them just until they are crunchy-tender and bright colored. (Do not use frozen sprouts.) The secret of this dish is balancing ingredients to mellow the strong flavor of these miniature cabbages. Olive oil, garlic, red pepper, Parmesan, and, especially, nutmeg do the trick admirably.

This old "gourmet" standby can indeed be spectacular, or it can be exceedingly dull. Everything rests on the quality of the ingredients. With good cheese, first-rate ham, homemade crumbs, and a little care in the cooking, you can't go wrong. If, however, you use indifferent, packaged boiled ham and ordinary cheese, and add insult to injury by overcooking them, you'll kill yourself wondering what all the fuss is about.

The beloved ginger root, that ubiquitous Asian ingredient, is paired with Italian Arborio rice in this super-simple risotto. The most important thing to remember when making a risotto is to never let it rest while on the burner: stir, stir, stir! In Italy a risotto is usually served as a primo piatto, after the starter and before the main dish. I've included this recipe with the main courses because I think that risotto can hold its own as an entrée, rather than a starter. And it is a great main course option for vegetarians if you substitute vegetable broth for the chicken stock.
