Oyster Po' Boys
Active time: 30 min Start to finish: 30 min
For those who don't like their oysters raw, there's the classic po'-boy sandwich. New Orleans's first po'-boy makers settled on a roll that is light and mild, so that it doesn't overpower the tender oysters inside, yet is substantial enough to keep its shape when the sweet juices are released from their cornmeal crust. We discovered that a soft-crusted French, Italian, Portuguese, or Cuban loaf works well. Hot pepper sauce is the traditional condiment, but we've improvised a little, using chipotle mayonnaise to add a layer of smokiness instead of pure heat.

Banana Nut Bread
My mother learned to cook this bread during the Depression, when nothing was wasted — especially overripe bananas. We clamored for this treat so often that she frequently bought extra bananas and let them get almost black. I've discovered that overripe bananas can be peeled, mashed, and frozen, then defrosted whenever I want to bake up this memory.
Sunshine Cake with Citrus Butter Cream
With the addition of a citrus custard as a filling and a sprinkling of coconut over the frosting, this would be known as a Robert E. Lee cake.
Thyme Corn Sticks
Can be prepared in 45 minutes or less.
Yeasted Buckwheat Waffles
Raising pancakes and waffles with yeast is an old American tradition that predates the invention of baking powder. The overnight proofing develops the flavor of the flours, and the yeast ensures lightness even for heavier grains. The batter keeps well, covered and refrigerated, for several days.

Moist, billowy, light as a feather, and perfumed with fresh orange juice and zest, this is an incomparably refreshing cake. If you live in a part of the world where oranges grow, you could not ask for a more appropriate and aromatic adornment than orange blossoms, but fresh daisies also convey the lighthearted spirit of this lovely cake.
