Vegan Garlic Mashed Potatoes

Extra-virgin olive oil takes the place of cream and butter in these decadent, golden mashed potatoes.

Cuban-Style Roast Suckling Pig

In Cuba, this dish is traditionally served on New Year's Day. In this tradition, as in the Hawaiian luau, the pig is usually covered with banana leaves and cooked over a coal fire in a pit that's dug in the backyard. Because this method is not easy to do at home, the recipe below uses a small suckling pig that will fit in the oven, yet deliver the same delicious flavor. Ask your butcher to split the pig for you. Don't be afraid to give this recipe a try — cooking a whole small pig is like cooking a whole turkey.

Pickled Carrot Sticks

Zanne Stewart, Gourmet's executive food editor, originally developed these carrot sticks to take on a picnic, but they were such a hit they've become a staple in her refrigerator. Best of all, they don't need to be sealed in sterilized jars, so they're a snap to make.

Onion, Raisin, and Garlic Compote

This recipe is an accompaniment for Brined Pork Loin with Onion, Raisin, and Garlic Compote .

Chimichurri Sauce

This garlicky sauce from Argentina is great spooned over beef or chicken.

Italian Sausage and Pepper Heros

Don't skip the green peppers when making these sandwiches. They give just the right balance to the pepper mixture, slightly cutting the sweetness of their red and orange companions.

Tandoori (Indian Barbecued) Chicken

Tandoori Murghi Of all the food cooked in a _tandoor,_the most popular and the best-tasting is chicken. The distinctive flavor, texture, and color of this dish are achieved by a particular yogurt marinade, by the use of tenderizers, a special tandoori coloring, and finally, by being cooked in the Indian clay oven. The recipe given here is designed for the conventional oven and charcoal grill. (Household-model tandoors are not yet commercially available in the United States.) The results are very much to my satisfaction.

Green Chile Chicken Tamales

Masa labeled "masa preparada para tamales" often contains baking powder and salt, so don't add either if it does. Soak the husks three hours ahead or overnight.

Linguine with Peperoncini and Bacon

"I had three kids in three years when I was a 'young married' in my twenties," writes Sheryl Hurd-House of Jupiter, Florida. "That's when I started cooking and realized I liked it."

Smoked Baby Back Ribs with Hoisin-Honey Glaze

To make these slow-cooked ribs, the barbecue is used as a smoker. The instructions given here are for a standard 22 1/2-inch Weber kettle barbecue. Grilling times and vent adjustments will vary with different brands. The only special equipment needed is a charcoal chimney, which is available at most hardware or home-and-garden stores. Marinate the ribs a day ahead.

Grilled Surf-and-Turf with Spicy Garlic-Shallot Butter

"I've been cooking since I was twelve, and my husband, Bruce, picked it up during a 'Mr. Mom' phase after our second daughter was born," writes Renee Davis of Cadiz, Ohio. "Although we've since returned to more traditional roles—I usually cook on the weeknights, and he grills on the weekend—we also have a great time coming up with recipes together. Bruce devised this spicy garlic butter to keep lobster tails moist as they cook on the grill." When you want to splurge, this is a sensational and simple dish with assertive garlic and hot (but not too hot) chili flavors.

Spaghetti with Garlic and Cumin

Robert Colombi of Paris, France, writes: "My mother was Sicilian and my father, Corsican, but I was born in Morocco and lived there for many years. I learned how to cook mostly from my mother (which is why pasta often turns up at dinnertime), but also from my many travels throughout Morocco (which is why my favorite spices are coriander, thyme, and cumin). As I became older, I developed a stronger interest in cooking, especially after I moved to France and got married. I guess I started to feel very nostalgic about the country of my childhood, and it became more important for me to remember and re-create those tastes for my French friends and family." This intriguingly flavored dish comes together in minutes.

Garlicky Mashed Potatoes

Vermouth-roasted garlic and Yukon Gold potatoes are terrific in this mellow dish.

Tarragon Roast Turkey with Vermouth

Such flavor from only a few ingredients — the tarragon and vermouth play off each other beautifully. Red or white wine will work with this meal; depending on your preference, serve a dry Sémillon or a fruity Pinot Noir.

Lobster and Pineapple Salad with Basil and Mint

It's best to serve this lobster salad right after you make it, rather than preparing it in advance. If the salad stands for more than half an hour, pineapple enzymes will alter the texture of the lobster meat. Active time: 30 min Start to finish: 30 min

Rick Bayless' Grilled Salmon Vera Cruz with Lemon-and-Thyme-Scented Salsa

Happily, this fish dish can be made a day ahead. Simply remove it from the refrigerator and arrange 2 hours before serving. Even better, the sauce also can be made 2 days ahead and kept, well covered, in the refrigerator. It's from Mexico, One Plate at a Time (Scribner), by Rick Bayless, the celebrated Chicago chef and cookbook author.
