Stir-Fried Beef with Tangerines, Green Beans, and Chiles
Slicing the beef paper-thin when stir-frying will get the meat nice and crispy, so make sure your knife is sharp. If tangerines are not in season, oranges make a fine substitute and no one will be the wiser. The only weird ingredient is the black Chinese vinegar. It has a sweet, malted flavor that is very traditional in Chinese cooking. If you’re a purist about Chinese food, the black vinegar will be worth the trip to an Asian market. If you can’t find it, I’m not going to tell anyone if you substitute balsamic vinegar.
Steamed Mussels with Saffron and Tomato
Fresh Prince Edward Island mussels are God’s gift to an appetizer menu. This dish has worked in every restaurant that I’ve been involved with and people just love it. If you don’t have saffron, it’s okay—but the curry is a must. I like serving grilled bread with this for sopping up the delicious broth.
Ricotta Tart with Fresh Tomatoes, Basil, and Black Olives
This upscale quiche is great for company. Read the section on blind-baking the crust a few times before you get started; it’s the trickiest part (but by no means hard). The only special equipment you’ll need is a 10 1/2-inch tart pan with a removable bottom. Once you have one of these, you’ll use it for a hundred different things, so it’s a good investment.
Wok-Smoked Duck with Green Tea and Orange
This dish takes a little planning ahead but is well worth it. Don’t be scared—it’s a show-off dish. You may, however, have to shop around for some of the makings. A trip to your local Asian market or a surf on the Internet should do it. Start by marinating the duck the night before you plan to serve it. A smoker isn’t required, but you will need a wok with a domed lid and wire rack insert (sorry, an electric wok won’t work). Serve with steamed Asian greens like bok choy or Chinese broccoli. Round out the meal with Perfect Steamed Jasmine Rice (page 240).
Herbed Roasted Vegetables with Feta and Olives
This is a wonderful Greek-style one-dish meal or a side dish for a party. Roasting brings out the flavors of the vegetables. You can prepare all the vegetables except the potatoes ahead of time.
Stir-Fry Roasted Vegetables
This basic, versatile recipe can be adapted to just about any vegetable depending on what you have on hand. While the oven preheats, prepare the vegetables. Serve with oven-grilled chicken breasts and steamed rice.
Maple-Roasted Winter Vegetables
A pan of these vegetables cooks easily along with chicken, Cornish game hens, or pork roast. Consider adding a dessert to the oven, too. All three items can be baked on separate racks. Place the vegetables in the center and the dessert on the bottom rack.
Tandoori Salmon with Cucumber Sauce
Tandoori Chicken is a classic northern Indian dish. The word “tandoori” comes from the Hindi word “tandoor,” a tall, cylindrical clay oven originally used in northern India to cook meat dishes and bread. Here, we use a tandoori spice mixture as a marinade for salmon. Traditionalists might balk, but when I’m in a hurry, I use a store-bought tandoori spice mixture. In the convection oven, the salmon cooks quickly and is moist and mildly fragrant. A minty cucumber-yogurt sauce adds an authentic flavor.
Turkey Meat Loaf with Roasted Red Pepper and Tomato Sauce
Roast the tomatoes, peppers, and garlic right along with the meat loaf to make the sauce.
Roasted Red Pepper and Tomato Sauce
Not only is this sauce delicious with meat loaf, it also goes well with roasted chicken or salmon.
Roasted Chicken Breasts in Garlic Butter
Fragrant with garlic, lemon juice, and butter, this may just become a favorite. Soak up the tasty pan juices with crusty French bread.
Wine-Marinated Chicken
This is a simple country-style roast chicken with a garlicky wine marinade. Roast small red or fingerling potatoes while the chicken cooks. Add them to the oven after the chicken has cooked for 15 minutes. You can even add a pan of popovers (page 191) to the oven. They will be done in about 1 hour.
Roasted Tomato and Garlic Soup
Roasting concentrates the flavor of tomatoes in this light, refreshing, easy-to-make soup. It’s irresistible either hot or cold.
Whole Roasted Garlic Heads
Roasted garlic becomes sweet, losing the sharp pungency that makes raw garlic so powerful. You can spread roasted garlic like butter on bread or vegetables. Add it to soups, sauces, and dressings, or smear it onto a pizza. You can roast a number of whole heads at one time.
Hot Garlic-Anchovy Dipping Sauce
Keep this sauce over a candle-warmer for the best flavor, but you can assemble the ingredients hours ahead. You can find anchovy paste in the gourmet section of most supermarkets. Otherwise, substitute half a tin of anchovy fillets, mashed.
Roasted Garlic and Parmesan Bread
This old favorite is a quick snack or accompaniment to a simple soup and salad meal. You can get the bread ready for roasting as the oven preheats. In the summer, I like to serve slices of toasted bread with a topping of chopped or thinly sliced fresh tomatoes from the garden.
Steamed Swordfish Bagnara-Style
As I wrote in this chapter’s introduction, the fishermen of Bagnara, a beautiful port on the Calabrian coast just north of the Strait of Messina, are renowned for their skill in catching the magnificent swordfish that migrate to this corner of the Tyrrhenian Sea every year. During our recent visit, I was not surprised to learn that the cooks of Bagnara are equally skilled when it comes to cooking pesce spada as well. The recipe I share with you here is among the simplest and best I have ever tasted, anywhere. Of course, as always in seafood cookery, the freshness of the fish is the key to success, so be sure to get swordfish at its absolute best.
Stuffed Baked Pasta
In Calabria, as in other regions of southern Italy, there’s a general preference for dried pasta, even for baked stuffed pastas. Usually, stuffed pastas like canneloni or manicotti are formed from flat pieces of fresh pasta, topped with filling, and then rolled up to make the familiar tube shape. But with this recipe, you stuff pasta for baking as they do it in Calabria, using the dried tubular pasta called paccheri; first cook them just to soften, then spoon in a savory sausage-and-ricotta filling. Fill a big pan with the stuffed paccheri, drape them with tomato sauce and grated cheese, and bake. As with other baked pasta casseroles, you can multiply this recipe many times and make enough schiaffettoni to feed any size crowd. The individual paccheri can be stuffed and the big pan (or pans) fully assembled in advance; bake at the last minute, while your guests are being seated. And best of all, you know everyone will love it.
Calabrese Salad
Peppers play a central role in this Calabrian version of potato salad. Fresh green peppers are fried as a main salad ingredient; and peperoncino, dried crushed red-pepper flakes, serves as an essential seasoning. The peppers you want for this are the slender, long ones with sweet, tender flesh, which I have always just called “Italian frying peppers.” These days, with the greater popularity of peppers and chilis here in America, markets sell a number of varieties that are suitable for frying, such as banana peppers, wax peppers, Hungarian peppers, and Cubanelle peppers. In addition to this delicious salad with potatoes, you’ll find many wonderful uses for fresh peppers, fried Italian-style. Season them with olive oil and slices of garlic, let them marinate, and enjoy them as part of an antipasto or layered in a sandwich. Or sprinkle a little wine vinegar on the peppers (with the olive oil and garlic) for a condiment-like salad that is just perfect with grilled fish or chicken.
Wedding Soup
In the dialect of the Lucani (as natives of Basilicata are known) maritare means “to wed,” and I have always thought that this wonderful soup was so named because it was customarily served at wedding celebrations. Recently, however, while doing some research, I came upon another explanation of why it is called maritata—because it weds vegetables (in the soup base) with meat (in the polpette), and with this added protein it becomes a complete and balanced one-course meal. I like both interpretations of the name and believe they’re compatible. Certainly a young couple, on the brink of their first night as newlyweds, can use this fortifying nourishment! There are many ways to prepare and serve a soup with multiple elements like this one, and you can of course play around with the recipe here. One variation is to fry the meatballs rather than poaching them. Though it takes a bit more work, it does give another layer of flavor (see my recipe for Meatballs in Broth in the Umbria chapter, page 196, for instructions on frying little meatballs for soup). Another option is to add cubes of provola to the soup just before serving. If you can get a good-quality Italian provola (mild provolone), this embellishment is superb. I’ve included instructions for this step at the end of the main recipe.
