Red-Cooked Chicken

Chinese cooks call food braised in soy sauce and sugar "red-cooked" for the reddish-brown tint that can result. While the chicken is braising, steam some rice and broccoli rabe as accompaniments.

Chicken Yassa

The first African dish I tasted and truly enjoyed was Senegal's Chicken Yassa. The chicken marinated in lemon and onion was served with rice in a brightly decorated enamel basin. The thrill of eating in Senegal in the open air and the delicious gustatory counterpoints of lemon, chile, onion, and chicken combined to make my first taste of this dish one of my favorite culinary memories. Later, I served the dish in a modified version on the "Today Show." It has become my trademark dish, and many of my friends, if they haven't had a Yassa in a while, will ask for it. I've gotten so bold about my Yassa, that I've served it to my Senegalese friends. It's relatively simple to prepare and a perfect introduction to African food.

Turkey Wraps with Chipotle Mayonnaise

Look for chipotle chilies in adobo sauce in the Latin American foods section of the market. Serve the wraps with purchased salsa and an avocado, grapefruit and red onion salad with oil and vinegar dressing. Complete the menu with chocolate wafer cookies and coffee ice cream.

Crusted Chicken and Black Beans

I came up with this recipe one day when I was boiling a big old hen for chicken soup and had plenty of meat left over, but if you don't care to fool with that, the casserole can easily be made with a nicely roasted chicken picked up in a deli or supermarket.

This recipe was inspired by a dish that a group of our food editors enjoyed at Chez Maître Paul, a Paris bistro. As the name suggests, poulet à la fermière contains a farmwife's bounty—chicken, cheese, vegetables, and herbs.

Tamarind Barbecued Duck with Smoky Plantain Crema

The tamarind, a tropical shade tree native to India, also grows in Southeast Asia, Africa, Hawaii, Mexico, South America, and, of course, the Caribbean. Its long brown brittle bean-like pods each hold a sweet-sour sticky brown pulp containing up to ten seeds. Its flavor is akin to dates mixed with lemon and peaches. Just as we in the West often use a squeeze of lemon to lift the richness of a dish, in Asia they use tamarind. The American palate is not accustomed to the tamarind's particular brand of sourness, and so Western dishes using the fruit are usually tempered by ingredients that soften its acidity. In this dish, the heavy cream in the Smoky Plantain Crema balances the tamarind's acidity, while the chipotles complement the flavor of the grilled duck meat. When preparing this, note that the duck should marinate overnight.
