Grilled Game Hen with Moroccan Spices

Steam broccoli spears, then grill them alongside the hen. Couscous and a cucumber and yogurt salad complete the main course. For dessert, sprinkle raspberries and sliced nectarines with some sugar and a few toasted almonds.

Risotto with Giblets

(Risotto con Regagli) The thrifty Italian Jewish cook wasted no part of the chicken. And it's easy for us to buy inexpensive giblets for this rich and delectable risotto. Donatella Pavoncello, in her delightful Dal 1880 ad oggi: la cucina dalla mia famiglia, cooks the rice in the giblet sauce and spoons some reserved sauce on top. I find it's easier to make the sauce, cook the rice, and then combine the two. That way you don't run the risk of gummy overcooked rice. Incidentally, this sauce is also wonderful tossed with pappardelle.

Teriyaki-Style Chicken

Can be prepared in 45 minutes or less.

Turkey Tonnato

Here, turkey stands in for the traditional veal in a do-ahead entré. Have your butcher bone, roll and tie the turkey breast.

Grilled Chicken with Olive Purée

The versatile, easy-to-make puree, in this recipe also adds terrific flavor to sandwiches, pizzas and pastas. Olivada is an olive spread, sometimes called black olive cream, and is available at Italian Markets, specialty foods stores and some supermarkets.

Chicken Posole

Chicken Sandwiches with Chive Butter

Garnish each plate with pickles, cherry tomatoes and radishes. Start with a steaming mug of potato soup, and end with wedges of apple cake.

Chicken with Ham, Fennel and Orange

For a casual supper, broil rounds of prepared polenta roll, and toss romaine lettuce with oil and vinegar; end with cheesecake. For a special dinner, have broccoli spears with browned butter and orzo pilaf with Parmesan. Buy a hazelnut dacquoise or other fancy cake from the bakery for a great dessert.

Garlic Chicken and Peppers with Beans

One could cook this on the stove and reduce the time by 10 minutes, but oven baking gives the chicken time to thoroughly absorb the flavors of the pepper and garlic. See how to joint a chicken.

Yassa au Poulet II (Chicken Yassa)

This variation on the classic yassa uses carrots and pimento-stuffed olives to create a rich chicken stew. It always comes up a winner. The chicken should marinate at least three hours before cooking.

Truffle-Scented Roast Turkey with Shallots and Chestnuts

This turkey is roasted in true French fashion with black truffles and shallots. Prepare the truffle butter and rub it over the turkey the day before roasting. A red Burgundy complements the earthy truffle flavor.

Asian Chicken Salad with Roasted Peanuts

Use leftover chicken if you have any on hand, or start with a rotisserie chicken. Be sure to pick up the sliced peppers from the salad bar while you're at the market. Crunchy sesame breadsticks are all you need to complete the meal — except, of course, dessert, which could be pineapple slices sprinkled with coconut and broiled.
