Spanish Tortilla

The spanish tortilla has nothing in common with the Mexican tortilla except its name, which comes from the Latin torta—a round cake. In its most basic form, the Spanish tortilla is a potato-and-egg frittata, or omelet, which derives most of its flavor from olive oil. Although the ingredients are simple and minimal, when made correctly—and there is a straightforward but very definite series of techniques involved—this tortilla is wonderfully juicy. And because it is better at room temperature than hot, it can and in fact should be made in advance. (How much in advance is up to you. It can be fifteen minutes or a few hours.)

Canapes with Piquillo Peppers and Anchovies

Piquillo peppers are wood-roasted peppers from Spain, sold in cans or jars. If you cannot find them, substitute homemade roasted peppers or canned “pimientos.”

Garlic-Mushroom Flan

We usually think of custards as desserts, but they may be savory as well, and in that form they make luxurious starters or light, flavorful main courses. Custards like garlic flan are often served in top restaurants, but the simplicity and ease of this preparation makes them good options for home cooks. Here’s one with a surprise in it: cooked shiitakes. It will be a hit.

Marinated Olives

The ease with which this dish can be thrown together and the range of meals it happily accompanies (menus with European, Middle Eastern, or Northern African accents are game, as are good old American cookouts) guarantee that it makes regular and frequent appearances on my dinner table. An assortment of olives is far preferable to just one kind. Try, for example, some oil cured, some big fat green Sicilians, and some Kalamatas just that simple combination will look bright and pretty. If you can lay your hands on more varieties, so much the better.

Fennel with Olive Oil Dipping Sauce

Fennel remains exotic enough to be a treat for many people, and this simple preparation simply elevates its stature a bit. Trim and discard the hard, hollow stalks that jut out from the top of the bulb; if you get your hands on a bulb with its fronds still attached, roughly chop them and add them to the hot oil with the garlic.

Grilled Eggplant Dip

Grilling is an important part of this dish, as it gives the eggplant a smoky flavor that’s hard to come by otherwise. Serve this dip with grilled flatbreads or slices of baguette, or pitas.

Figs Stuffed with Goat Cheese

Fall is the time for fresh figs, which people who live in Mediterranean climates (including many Californians) take for granted but which are a real treat for the rest of us. Fresh figs may be green or dark purple; color does not affect flavor (ripeness and variety do), but most people perceive purple figs as more attractive. This is obviously a fruit dish, but the fruit functions like a vegetable in this preparation.

Beet Roesti with Rosemary

This Thick Beet Pancake cooked slowly on both sides until the beet sugars caramelize, sports a crunchy, sweet crust that, I swear, is reminiscent of crème brûlée. It must be cooked in a nonstick skillet, preferably a twelve-inch one (if you have only a ten-inch skillet, use only one and a half pounds of beets and the same quantity of the other ingredients), over moderate heat: too-high heat and too-quick cooking will burn the sugary exterior of the pancake while leaving the inside raw. Remember that beets bleed, so it is wise to peel them over the sink and wash the grater or food processor as soon as you’re done with it.

Rosemary-Lemon White Bean Dip

Like most bean dishes this puree is best if you use freshly cooked dried beans, but it is still good with canned beans. One-quarter pound of dried beans will yield about one cup, the amount needed for this recipe, although you can double the quantities if you like. If you use dried beans, cook them in unsalted water to cover (presoaking is unnecessary), with a couple of bay leaves, until very tender. If you use canned beans, you’ll need almost a full fifteen-ounce can to get one cup (there’s a lot of water in those cans).

Negima

Wrapping one food with another is familiar, especially if meat, cheese, or vegetables make up the filling—think of ravioli, stuffed cabbage, or egg rolls. Making meat the wrapping is a nice role reversal, a neat twist that is extraordinary enough to allow a simple preparation to wow a crowd. Such is the case with the Japanese negima, in which beef is wrapped around chives or scallions, then brushed with soy sauce and grilled.

Shad Roe with Mustard

Shad the largest member of the herring family, migrates to the rivers of the East Coast every spring. It’s a big, bony fish (filleting it properly is an increasingly rare skill) with moist flesh that is not unlike that of salmon. But its huge egg sacs, which come in pairs held together by a thin membrane, are the real attraction. They’re filled with millions of eggs, which, if they are not overcooked, remain creamy and rich in a way that is reminiscent of fine organ meat—not quite foie gras, but not that far away either. As a bonus, the exterior membrane becomes slightly crisp. Most shad roe is sadly overcooked, but this need not be the case. Keep the cooking time for shad roe short, just long enough to firm up the roe and cook it to the equivalent of medium-rare. (It’s okay to cut into it for a look-see the first couple of times you try this, but it’s also pretty easy to get the hang of it, because the change in texture is rather dramatic.) Note that this recipe serves two; it’s easy enough to double, however; just use two skillets instead of one to avoid crowding the roe.

Cod Cakes with Ginger and Scallions

Between your favorite crab cake and a box of frozen fish sticks lies a world of crisp, easily produced fish cakes that make for great weeknight eating. In addition to fish, they all have two elements in common: something to “bind” the cake as it cooks and a fair amount of seasoning. My favorite way to hold fish cakes together is to mix the flaked meat with mashed potatoes, about three parts fish to one part potato. If you begin with a mild fish, like cod, the flavorings can be as adventuresome as you like. My preferred combination is a hefty dose of ginger and cilantro, spiked with a bit of hot red chile. The result is a zingy cake that needs nothing more than a squeeze of lime.

Paella, Fast and Easy

Some people argue that a true paella must contain only meat or seafood, never both, that a true paella can be prepared only in a paellera, or that true paella must be cooked outdoors over wood. Perhaps they’re all right. What’s clear to me is that you can produce a fabulous rice dish I call paella in just over half an hour, which makes it a great option for weeknights.

Sea Scallops with Nuts

If you can find the rare (and shockingly expensive) true bay scallops from Nantucket or Long Island, by all means use them in this dish, but reduce the cooking time. Do not, however, try this dish with the tiny calico scallops (sometimes mislabeled as bays), which, despite your best efforts, will overcook before they brown.

Broiled or Grilled Softshell Crabs

Though you can just shove the crabs under the broiler in this recipe, this slightly more complicated procedure works best: Preheat a large roasting pan in the broiler for ten minutes or so. When you’re ready to cook, put the crabs in the pan, adjusting the broiler rack so that it’s two or three inches from the heat source or as close as you can get it (in my oven, this means propping the roasting pan on top of another pan). The crabs will be done in less than 5 minutes. Remember that some oven broilers work best if the door is ajar, which will keep the element from cycling off and make cooking time faster, not slower.

Curried Scallops with Tomatoes

You can never go wrong by adding a little crunch to scallops when you sauté them (see the following recipe for another example). Usually, you dredge them in flour, cornmeal, or bread crumbs before adding them to the hot pan, and it’s something that most everyone seems to like. But you can take that crunch and give it an intense flavor by dredging the scallops directly in a spice mix. Although you can’t do this with everything—dried herbs don’t get crisp, and some spices are far too strong to use in this quantity—it works perfectly with curry powder, which not only seasons the scallops and their accompanying sauce but gives them the crunch we all crave.

Squid in Red Wine Sauce

This is among my favorite dishes using this plentiful but still under-appreciated cephalopod. (The term, which is also used for octopus and cuttlefish, describes sea creatures whose “feet” grow from their heads.) Like many people, I’m a fan of fried “calamari,” but that dish is best suited to restaurants because of squid’s tendency to spatter when deep-fried. Although sautéing and stir-frying are good, fast techniques for squid, they, too, tend to be messy. A gentle braise in flavorful liquid and seasonings is the perfect alternative, and this one, with its Provençal spirit, is delicious and warming.

Roasted Bay Scallops with Brown Butter and Shallots

Real bay scallops—which come from the waters between Cape Cod and Long Island—are in season through the winter and are an amazing treat (they’re also amazingly expensive). Though you can eat them raw, they’re also good cooked, but simply . . . very simply.
