Tortilla Soup with Chicken and Lime

Hummus, a dip/spread traditional in many Middle Eastern countries, is usually made with chick-peas (garbanzo beans), but we use white beans for a change of pace. It is delicious with steamed potatoes and artichokes as well as blanched broccoli, cauliflower and green beans.

Asparagus and Swiss Cheese Souffles

Crusty sourdough rolls and coleslaw made of shredded red and green cabbage tossed with a vinaigrette are nice with the soufflés. Afterward, have a caramel-nut tart from the bakery and cups of herbal tea.

Fried Quail with Sausage and Oyster Cream

Throughout the South, former cotton plantations remain as large tracts of land maintained as hunting preserves. The quail is a small game bird that spends most of its time on the ground. Often called "partridge," it is favored for its delicious white flesh. Serve one of these birds to each person as an appetizer for a big celebratory meal such as Christmas or a rehearsal dinner, or two as the main course.

Although the morels add a woodsy intensity to the flavor of the consommé, they are not essential. You can substitute other dried exotic mushrooms or eliminate them altogether and simply float a thin slice of fresh white mushroom on the soup right before covering the bowl with the pastry.
