Healthy Blueberry and Banana Muffins

These delicious muffins are packed with oat bran, soy milk, and fresh fruit.

Classic Caponata

Doris Jacobson of Anaheim, California, writes: "I host many family gatherings, and I always get requests for my lemon bars and my caponata appetizer. They're easy to make and perfect for picnics at the beach or an evening at the Hollywood Bowl. Plus, both recipes can be made ahead. Fresh basil brightens up this traditional eggplant spread. Serve it on baguette slices or crackers.

Grilled Beef, Chicken, Shrimp, and Mushroom Skewers

To make your cocktail party more participatory, have your guests grill their own skewers. A hibachi is even more user-friendly than a grill, since the ends of the skewers hang out over the edge, eliminating the need for tongs. If you're cooking everything yourself, it's easiest to use a large grill or a broiler (see cooks' note, below) and serve the skewers in batches.

Testers refused to believe that chef Terry Conlan's ultra-creamy cheesecake was low in fat — but we triple-checked the numbers, and they're gloriously correct. Calories are still a bit high, but light butter and fat-free cream cheese drop the fat count to only 20 percent of the recipe's calories (less than half that of a regular slice), and goodies like caramel sauce and chocolate chips maximize the taste.

Triple-Chocolate Cookie and Strawberry Ice Cream Sandwiches

Bake and freeze the Triple-Chocolate Cookies a day before filling them with ice cream. For convenience, you can make the homemade ice cream up to three days in advance. Purchased strawberry ice cream (softened slightly at room temperature until spreadable) also works in these sandwiches.

We found a significant difference in the amount of liquid exuded by fresh versus frozen sour cherries when cooked. If your cherries give off a lot of liquid, you may have to reduce your syrup a little longer.
