Every year around this time, we find ourselves searching for the best delicata squash recipes. Roasting a squash (or six) is a yearly rite of passage that gets us reacquainted with fall cooking. And while we love all winter squash, delicata is arguably the best. Its flesh is quick-cooking and its skin is thin (and edible!), which means it's perfect for weeknight dinners and fuss-free holiday sides.
