Adobo

Adobo is an oregano-based spice mixture that, when purchased in stores, is usually made from dried ingredients—dried oregano, onion powder, and garlic powder. This fresh version is infinitely better; use it as a rub for pork, chicken, or beef.

Ingredients

2 garlic cloves, peeled
1 small onion, peeled and quartered
1 tablespoon fresh oregano or marjoram leaves
1 teaspoon salt
1 teaspoon freshly ground black pepper

Preparation

  1. Step 1

    Mince all the ingredients together by hand or combine them in a food processor and turn the machine on, stopping to scrape down the sides as necessary.

    Step 2

    Use immediately or store in the refrigerator, tightly covered, for a couple of days.
