A spritz typically features a bitter liqueur mixed with sparkling wine and/or fizzy water or soda. In this nonalcoholic one, the saltiness and complexity of the olive brine adds depth, while the garnishes contribute visual and aromatic interest. Ingredients

1½ oz. chilled nonalcoholic citrus aperitivo (such as Wilderton)
¾ oz. fresh lemon juice
½ oz. olive brine
3 oz. chilled tonic water
Olives, thyme sprig, and lemon twist (for serving; optional)

Preparation

  1. Combine 1½ oz. chilled nonalcoholic citrus aperitivo, ¾ oz. fresh lemon juice, and ½ oz. olive brine in a collins glass. Fill with ice, top with 3 oz. chilled tonic water, and stir twice. Garnish with olives, thyme sprig, and lemon twist if desired.
