Baked Barbecue Tofu and Peppers

So good and very easy, this recipe might just be the ticket to onverting tofu skeptics.

Ingredients

1 pound firm or extra-firm tofu
2 green or red bell peppers, or 1 of each, cut into approximately 1/2 by 2-inch strips
1 large onion, halved and thinly sliced, rings separated
3/4 cup natural barbecue sauce, or as needed

Preparation

  1. Step 1

    Preheat the oven to 425°F.

    Step 2

    Cut the tofu into 1/2-inch-thick slices, and blot well between clean tea towels or several layers of paper towel. Cut the slices into strips or dice.

    Step 3

    Stir all the ingredients together in a mixing bowl, and transfer to a foillined baking sheet or roasting pan.

    Step 4

    Bake for 15 minutes, then stir and bake for another 10 minutes, and serve.
