Citrus Sole

Orange marmalade brings a completely different taste to an already wonderful combination of seafood and citrus juices.

Ingredients

Cooking spray
2 tablespoons lemon juice
2 tablespoons lime juice
1 1/2 tablespoons all-fruit orange marmalade
4 mild fish fillets, such as sole (about 4 ounces each), rinsed and patted dry

Preparation

  1. Step 1

    Preheat the oven to 375°F. Lightly spray a 12 x 8 x 2-inch baking pan with cooking spray.

    Step 2

    In a small bowl, stir together the lemon and lime juices and orange marmalade. Using a basting brush, coat both sides of the fish with the mixture. Transfer the fish to the pan.

    Step 3

    Bake for 18 to 20 minutes, or until the fish flakes easily when tested with a fork.
