3 tablespoons curry powder
2 tablespoons vegetable oil
1 medium vine-ripened tomato (about 1/2 pound), cut into 1-inch chunks
2 tablespoons fresh lemon juice
1 teaspoon sugar

Preparation

  1. In a small saucepan cook curry powder and oil over moderate heat until mixture begins to sizzle. Cook mixture, stirring, 1 minute, and stir in remaining ingredients. Cook sauce, stirring, until smooth, about 10 minutes.
