Dijon Mustard Vinaigrette

Ingredients

1 extra-large egg yolk
1 tablespoon Dijon mustard
1 1/2 tablespoons red wine vinegar
1 tablespoon lemon juice
3/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Preparation

  1. Whisk the egg yolk in a small bowl with the mustard, red wine vinegar, lemon juice, 1/2 teaspoon salt, and a pinch of pepper. Slowly whisk in the olive oil. Thin the vinaigrette with 1 teaspoon water or more if needed. Taste for balance and seasoning.
