1 pound red potatoes (peeled if desired), cut into 1-inch pieces
1/3 cup milk
1/4 cup garlic-and herb-flavored soft cheese such as Boursin

Preparation

  1. In a saucepan simmer potatoes in water to cover until tender, about 10 minutes. Drain potatoes and return to pan. Mash potatoes with milk, cheese, and salt and pepper to taste over moderate heat until they are smooth and mixture is heated through.
