Eat this hearty chili as is or over rice.

Ingredients

2 tablespoons olive oil
1 large onion, cut into 1/2-inch dice
1 pound sweet Italian sausage, removed from casing
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon crushed red-pepper flakes
2 pounds leftover roast beef , cut into 1 1/2-inch cubes
2 cups drained canned Italian plum tomatoes, crushed
2 cups beef broth
6 tablespoons tomato paste
1 tablespoon chopped chipotle peppers in adobo sauce
1 tablespoon brown sugar
1 red bell pepper, diced (1/2 inch)
Salt and pepper, to taste

Preparation

  1. Heat the oil in a large pot over low heat. Add the onion; cook 10 minutes. Crumble in the sausage; brown over medium-high heat about 10 minutes. Stir in remaining ingredients. Simmer, uncovered, for 45 minutes, stirring occasionally.
