Kiwifruit Sorbet

Kiwis are people from New Zealand. Kiwifruits are the emerald green fruits that we consume. The difference is important to New Zealanders, who are apt to look somewhat terrified if you present them with a bowl of sorbet and proudly tell them is made from fresh kiwis.

Recipe information

  • Yield

makes about 1 quart (1 liter)

Ingredients

2 pounds (1 kg) ripe kiwifruits (10 to 15)
3/4 cup (150 g) sugar
1 1/3 cups (330 ml) water

Preparation

  1. Peel the kiwifruits and pluck out the woody nubbins within the stem ends, using the point of a paring knife. Cut the kiwifruits into chunks and purée them in a blender or food processor (you’ll should have 2 cups, or 500 ml, of purée). Add the sugar and water and blend until smooth.
