Liptauer gained its name from the provenance of the fresh sheep's milk cheese with which it was originally made, Lipto, Hungary. Our version of this seasoned spread is made with cream cheese.

Ingredients

6 ounces cream cheese, softened
1/2 stick (1/4 cup) unsalted butter, softened
1 teaspoon sweet paprika (preferably Hungarian)
1 teaspoon drained bottled capers
2 flat anchovy fillets, rinsed, patted dry, and minced
1 shallot, minced
1/2 teaspoon caraway seeds
crackers or toast points as an accompaniment

Preparation

  1. In a bowl cream together the cream cheese and the butter, add the paprika, the capers, the anchovies, the shallot, the caraway seeds, and salt and pepper to taste, and combine the mixture well. Pack the cheese into a crock and chill it, covered, for 1 day to let the flavors develop. Serve the cheese with the crackers.
