Marinated Mushrooms

An unusually versatile preparation, good as an appetizer, a side dish, or a salad, and as appropriate over lettuce as it is solo. Can be made days and days in advance.

Ingredients

1 pound button mushrooms, trimmed and sliced
1/3 cup extra virgin olive oil
1/4 cup fresh lemon juice
Salt and black pepper to taste
Chopped fresh parsley leaves for garnish

Preparation

  1. Step 1

    Combine the first 3 ingredients in a bowl with a small pinch of salt and some pepper. Cover and refrigerate for at least 2 hours and up to several days, tossing occasionally.

    Step 2

    Taste and adjust the seasoning, then garnish and serve.
