Ingredients

2 large eggs
1 1/2 cups coarsely chopped pitted or pimiento-stuffed green olives, drained well on paper towels
2 tablespoons olive oil plus additional for brushing the pan

Brush an 8 1/2- by 4 1/2-inch loaf pan with the additional oil, transfer the batter to the pan, and bake the bread in the middle of a preheated 350°F. oven for 1 hour, or until a tester comes out clean. Let the bread cool in the pan for 10 minutes and turn it out onto a rack.
