Party Eye-of-Round Steak

Ingredients

1/2 cup vegetable oil
1/2 cup bourbon
One 0.7-ounce package Italian salad dressing mix
2-3-pound eye-of-round beefsteak
Salt
Coarsely ground black pepper

Preparation

  1. Step 1

    In a shallow glass dish, combine the oil, bourbon, and salad dressing mix. Add the beef and turn to coat it with the marinade. Cover and refrigerate overnight.

    Step 2

    Preheat the oven to 325 degrees. Remove the meat from the marinade and blot it dry with a paper towel. Salt the meat, then coat it heavily with pepper. Roast uncovered until a meat thermometer registers your preferred doneness. Cool the beef, slice thin, and serve with assorted breads and spreads, including a variety of mustards.
