    If your pot roast really looks too fatty to be acceptable, cook it well, chill it in the refrigerator, remove the now-solidified fat, and return it to the pot, or wherever it was.

    In addition to the usual meat tenderizers, you might consider adding tomatoes to the pot the roast is cooking in. The acid in tomatoes breaks down the fibers in the meat, thereby tenderizing it. If you don’t have 3 hours to simmer the roast, slice it very thin, put it back in the pot for 15 minutes, and then serve.
