Red Wine Vinaigrette

Ingredients

2 tablespoons red wine vinegar
1 garlic clove, smashed
1 teaspoon coarse salt, or to taste
1/4 teaspoon freshly ground pepper, or to taste
3 tablespoons extra-virgin olive oil
3 tablespoons sunflower or other neutral-tasting oil

Preparation

  1. COMBINE VINEGAR, garlic, salt, and pepper in a blender and let macerate 10 minutes, then discard garlic. With blender running, gradually add oils in a slow, steady stream, and continue blending until mixture is emulsified. Season with more salt and pepper, as desired.
