Salsa Verde

Fresh herbs give these sauces bright flavors. Use them to top grilled meats or steamed vegetables. They also make fantastic sandwich spreads.

Ingredients

1/2 cup chopped fresh parsley
1/2 cup extra-virgin olive oil
3 tablespoons capers or dill gherkins, rinsed and chopped
1 tablespoon fresh lemon juice
1 tablespoon fresh oregano, chopped
1 garlic clove, chopped
Coarse salt (optional)

Preparation

  1. Step 1

    In a small bowl, combine the parsley, olive oil, capers or dill gherkins, lemon juice, oregano, and garlic.

    Step 2

    Stir the mixture until well blended; season with salt, if desired.
