Sautéed Shrimp—A “Can’t Miss” Treat!

Cooks' Note

Shrimp are low in fat and calories, but high in iron and potassium. For a more filling dish, serve over brown rice.

Recipe information

  • Yield

    serves 4

Ingredients

1/4 cup olive oil or butter
2 pounds medium shrimp, peeled and deveined
1/2 cup chopped fresh flat-leaf parsley
1 teaspoon garlic salt
1 lemon

Preparation

  1. Preheat the oil or melt the butter in a large nonstick skillet over medium heat. Add the shrimp, parsley, and garlic salt. Sauté until the shrimp are opaque, about 2–2 1/2 minutes. Squeeze the lemon over the shrimp and cook for 1 minute more. Plate the shrimp and drizzle with pan juices.
