    Two bouillon cubes (beef, chicken, or vegetable) in 1 cup water make an acceptable substitute for beef, chicken, or vegetable stock. Watch your salt levels, though, since bouillon is saltier than stock. But if you have no bouillon either, some soups work fine using water, provided that you up the seasonings. Consider adding a splash of soy sauce, a dollop of white wine or sherry, and a bit of garlic if you haven’t already.
