Ingredients

3 pounds Granny Smith apples (about 8 medium), peeled, cored, cut into 1/2-inch pieces
2 1/4 cups apple cider
1 3/4 cups dried cranberries
3/4 cup tequila
1/2 cup sugar
1 cinnamon stick
3/4 teaspoon ground black pepper

Preparation

  1. Combine all ingredients in large pot. Set pot over medium heat and bring mixture to simmer. Cook until apples are tender and cranberries are plump, stirring occasionally, about 20 minutes. Cool to room temperature. Cover and refrigerate until compote is well chilled, about 2 hours. (Compote can be prepared up to 1 day ahead. Keep refrigerated.)
