  • Yield

    4 servings

Ingredients

1/2 stick butter, salted
1 cup onion, chopped
2 carrots, peeled and diced small
1 pound lean ground beef
1 tablespoon sea salt
1/2 teaspoon black pepper
2 teaspoons tomato paste
1 cup chicken broth
2 teaspoons Worcestershire sauce
1 small package sliced mushrooms
1/2 cup fresh or frozen sweat peas

Preparation

  1. Step 1

Bake the Green Giant® Mashed Cauliflower, as directed.

    Step 2

For the filling, melt the butter in sauté pan set over medium high heat. Once the butter starts to melt, add the onion and cook until translucent.

    Step 3

Next add in the carrots and mushrooms and sauté just until they begin to take on color, approximately 3 to 4 minutes.

    Step 4

Add the ground beef, salt and pepper and cook until the beef is browned and cooked through.

    Step 5

Add the tomato paste, chicken broth, Worcestershire and stir to combine.

    Step 6

Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.

    Step 7

Add the peas to the beef mixture and spread evenly into serving dishes. Top each serving with the warm Green Giant® Mashed Cauliflower.

An ex-boyfriend’s mom—who emigrated from Colombia—made the best meat sauce—she would fry sofrito for the base and simply add cooked ground beef, sazón, and jarred tomato sauce. My version is a bit more bougie—it calls for caramelized tomato paste and white wine—but the result is just as good.

Fufu is a dish that has been passed down through many generations and is seen as a symbol of Ghanaian identity and heritage. Making fufu traditionally is a very laborious task; this recipe mimics some of that hard work but with a few home-cook hacks that make for a far easier time.

Originally called omelette à la neige (snow omelet) in reference to the fluffy snow-like appearance of the meringue, île flottante (floating island) has a lengthy history that dates back to the 17th century.
