Zesty Oven-Fried Potatoes

This is finger food at its finest! Invite some friends over for a meal of these oven-fries, stovetop pork chops, and Balsamic-Marinated Vegetables (page 78).

Ingredients

Cooking spray
1 1/2 pounds medium red potatoes (4 to 5), each potato cut lengthwise into 6 wedges
1 tablespoon olive oil
1/2 to 3/4 teaspoon Creole Seasoning (page 278) or salt-free spicy seasoning blend
1/2 teaspoon pepper
2 tablespoons malt vinegar

Preparation

  1. Step 1

    Preheat the oven to 400°F. Lightly spray a large baking sheet with cooking spray.

    Step 2

    Arrange the potato wedges in a single layer on the baking sheet.

    Step 3

    In a small bowl, stir together the oil, Creole Seasoning, and pepper. Drizzle over the potatoes, stirring to coat.

    Step 4

    Bake for 30 minutes, or until the potatoes are golden and tender.

    Step 5

    Just before serving, sprinkle with the vinegar.
