Ingredients

¾ cup wheat bran (175 ml)
1 cup all-purpose flour (250 ml)
¾ cup whole wheat flour (175 ml)
2 tsp baking powder (10 ml)
1 tsp baking soda(5 ml)
Pinch salt
1 tsp cinnamon (5 ml)
1 cup soured milk* or buttermilk (250 ml)
¾ cup brown sugar (175 ml)
1/3 cup melted butter (75 ml)
2 eggs
3 ripe nananas, mashed (about 1 cup)
2 tbsp orange juice (30 ml)
1 tbsp grated orange peel (15 ml)
½ cup raisins - optional (125 ml)
½ chopped walnuts - optional (125 ml)

Preparation

  1. 1.Preheat ove to 350o F (180o C). 2. In a large bowl, stir together bran, both flours, baking powder, baking soda, salt and cinnamon; set aside. 3. In a medium bowl, beat together soured milk, brown sugar, butter, eggs, bananas, orange juice and peel. Fold into dry ingredients just until mistened. Stir in raisins and walnuts and spoon batter into buttered 9"x 5" (23 x 13 cm) loaf pan. 4. Bake for 55 to 60 minutes or until a toothpick inserted in the centre comes out clean.

    · To sour milk, combine 1 tbsp (15 ml) of white vinegar with milk.

    For the adventurous: add dried cranberries instead of raisins.
