Ingredients

2 cups potato, large dices
2 cups cauliflower pieces
1 cup carrots, chopped
3 cloves garlic
1 cup onion, chopped
1 1/2 tsp salt
4 cups chicken stock
1 1/2 cups mild cheddar cheese, grated
3/4 cup milk
1/4tsp dill weed
1/4 tsp dill seed or caraway
1/4 tsp dry mustard

Preparation

  1. Bring potato, cauliflower, carrots, garlic, onion, salt and stock to simmer and cook for 15 minutes. Let cool and puree until smooth. Wisk in cheese, milk and spices.
