Southwestern Pumpkin Soup
"The Watermark restaurant here in Cleveland is my favorite place to take out-of-town guests—and I find other excuses to go, too," writes Bob Charleton of Cleveland, Ohio. " Last time I went there, I had lunch in the Garden Room, a glassed-in space overlooking the Cuyahoga River. The highlight of the meal was an unusual pumpkin soup topped with cheddar cheese."
Surprisingly easy to make, this soup is flavored with cumin and chili powder.
Cinnamon, Brown Sugar, and Walnut Shortbread Crescents

Celery Victor
This is a light and elegant update of the San Francisco original that was invented at the Hotel St. Francis by chef Victor Hirtzler. Though it is often served topped with anchovies, we love the way it tastes without them.

Sorrel-Wrapped Goat Cheese and Beet Stacks
If you can't get sorrel at your local market, arugula leaves or large basil leaves are a good alternative.
Green Goddess Dressing
Here's a tangy dressing that is great on sliced tomatoes, mixed greens, hard-boiled eggs, or cold steamed potatoes.
Sour Cherry Preserves
I love these preserves because they're both tart and sweet. For the best color, choose true-red sour cherries. Darker varieties — those that resemble Bing cherries — will make darker preserves, which will also be delicious. The cherries are steeped overnight in sugar, which deepens their flavor and helps them to stay plump. Kernels from the cherry pits (tied in a cheesecloth bag) add an almondy note to the preserves.

Raspberry Swirl Cookies
When freshly baked, these appealing cookies are chewy, crisp, and tender all at the same time. If stored in an airtight container for a day, they are still delicious, only softer.
Brussels Sprouts with Marjoram and Pine Nuts
Think you don't like brussels sprouts? Think again: These are pretty irresistible.
White Beans with Anchovies
Offer thinly sliced serrano ham or prosciutto and bowls of stuffed olives and toasted almonds along with the beans.
Braised Short Ribs with Dijon Mustard
Chefs know this secret: Short ribs are long on flavor. Their rich, meaty taste makes them a perfect choice for cooks who want full-bodied food with very little fuss. This dish was inspired by a recipe in Daniel Boulud's Café Boulud Cookbook. The chef begins by reducing a great deal of red wine. We adopted his technique, which produces such a rich and delicious sauce, it tastes as if many days—and ingredients—were required to produce it.
Like many people, we love to serve short ribs with a comforting side dish of mashed or roasted potatoes.

Asparagus with Wasabi-Mayonnaise Dip
You can substitute wasabi powder for the wasabi paste in this recipe, but we find that the paste imparts a fresher flavor. Force the wasabi powder through a very fine sieve before using.

Steamed Pork and Jícama Dumplings
Though these dumplings are traditionally cooked in stacked Asian bamboo or metal steamers, you can also use a pasta pot with a deep perforated colander-steamer insert. If your pot has a second shallow colander-steamer insert, you can steam 2 batches at once. The dumplings should be served warm, so reheat them in batches as platters need replenishing.
