Tomato-Chipotle Salsa
Reminiscent of canned chipotles in adobo, but obviously fresher and with an emphasis on the tomatoes and the smokiness the chipotles bring, rather than their heat. (You can, of course, make it hotter by adding more chipotles.) It’s good stirred into soups but is used primarily as a salsa for bland dishes, whose blandness will be turned around immediately.
Salsa Verde
This is a sharp, spiky sauce, but not a superhot one (it’s not a supergreen one, either!). Use it as a dip for chips or vegetables or as a basting sauce when roasting meat, fish, or vegetables.
Salsa Verde with Tomatillos
A raw salsa, with nice strong flavors. Best with tomatillos, but still good with not-too-hard green tomatoes. I like to mix a little just-ripe red tomato in as well.
Xec
A tiny little side condiment served with grilled chicken or fish that can make any meal sing. It’s fine without any chile at all, but I like a touch. This is a very fragile dish; make it at the last minute and serve it all at once. It will go fast, believe me.
Mojo Criollo
Powerfully delicious, this sauce is served throughout the Caribbean, often with grilled chicken but also over vegetables. Best made with the juice of sour oranges, but you won’t find those here; I use a combination of orange and lime juices.
Bananas in Coconut Milk
The small “finger” bananas are perfect for this, because they’re denser-fleshed than regular bananas; you can find them at many supermarkets and almost all Asian and Latin markets. Regular bananas work well too, of course, but they should not be too ripe.
Steamed Coconut Custard
Palm sugar, or jaggery, is dark, unrefined sugar made from a variety of sources, including the sap of the palm tree. It can be chunky and must be broken up; dark brown sugar is a nearly perfect substitute. This dish is great with slices of ripe fresh mango.
Sweet Sticky Rice with Mangoes
A quicker, easier version of the preceding coconut milk pudding, this simple dessert is popular at food markets throughout Southeast Asia. Great with mangoes or any other ripe tropical fruit.
Sweet Rice Flour Dumplings
These sticky, sweet dumplings, which are easier to produce than most savory dumplings, are served at New Year’s festivities throughout East and Southeast Asia. Palm sugar and glutinous rice flour can be found at most Asian markets.
Basic Long-Grain Rice
How quick-cooking rice came into existence I’ll never know, given how easy this is. Basically, you can cook long-grain rice any way you want to, as long as you use sufficient water and stop the cooking (draining excess water if necessary) before it becomes mush. This is the most straightforward method.
Ratatouille
Ratatouille calls for a fairly specific list of vegetables: eggplant, tomatoes, zucchini, peppers, and usually onions. These are cooked slowly, together, with a lot of olive oil and some garlic. The dish is finished with fresh basil; how could it be bad? Needless to say, ratatouille is best in midsummer, when the vegetables are at their peak. It can be served hot or at room temperature and is delicious both ways. It’s especially good with grilled sausage.
Black-Eyed Pea Fritters
These fritters, which you’ll also find in Texas and Florida, have their origins in the Caribbean—and, if you want to trace them further back, India; see the variation.
Pajon
In Korea, this popular starter and snack is served at home, in restaurants, and on street corners. (It’s also one of the most popular dishes in Korean restaurants in the States.) At its most basic, it’s a large egg batter scallion pancake, but other vegetables, meat, and seafood are often added to make it a fancier and more substantial dish. Glutinous rice flour creates a wonderfully chewy texture, but if you can’t find it, all-purpose flour is perfectly fine. Serve these immediately after making them.
Scallion Pancakes
This tough, chewy little pancake is a staple in China. Though the dough requires at least an hour of resting time, it’s easy to make. Cut it into small pieces and serve as finger food for a crowd or into larger wedges and serve at the table, as part of a general Chinese feast. Lard is the traditional (and best) fat for cooking these; substitute oil if you prefer.
Sautéed Peppers with Miso
Every culture that grows peppers grills them, and the people who eat them always swear “they’re not that hot.” Well, in Japan, not only are they not that hot, they are often sautéed; and only in Japan are they sauced with miso. Use mild long green chiles like Anaheims or—if you can find them—mild long red chiles, and you’ll come pretty close to duplicating the original.
Fried Green Chiles
This simple starter is served all over the world—at least wherever chiles are grown—but I first had it in Basque country. Here they’re fried, but you can grill fresh chiles as well; in either case they taste fresh, smoky, salty, and spicy all at the same time. The chiles you use can be mild or hot. If you use mild long chiles, like Anaheim, most people will be happy.
Dumpling Wrappers
An all-purpose wrapper, useful for many of the recipes on the following pages: dumplings, pot stickers, wontons, and so on. Of course you can buy these, ready made, at any supermarket, but they are fun and pretty easy to make—a good afternoon project and one kids will like. Note that the wrappers are made in stages, with a resting period in between; this period can be extended up to a day if you wrap the dough ball in plastic and refrigerate—just be sure to let it come to room temperature once again before proceeding.
Piquillo Peppers with Shiitakes and Spinach
A tapa based on piquillo peppers (see page 47), which are sold in jars and cans at specialty food stores and many supermarkets and are naturals for stuffing.
Pissaladière
The most exciting pissaladière I ever had was served it the open-air market in the heart of old Nice. It was baked in a wood-burning oven a few blocks away, sent to the market by bicycle, and eaten standing up or at picnic tables shaded by huge awnings. The wedges were gently sweet and intensely salty; the crust, just a half inch thick, was perfumed with the local olive oil and was perfectly browned and crisp. It was so simple—mostly just sweet onions on a wonderful crust. You can make a wonderful pissaladière at home: just be sure to cook the onions very, very slowly.
Farinata Genovese
Farinata, which is nearly identical to the socca of Provence, is a cross between firm polenta and a primitive pizza. To me it’s the perfect no-work Mediterranean appetizer, a great thing to have in your repertoire if you want to make sure there’s something warm for guests to eat when they arrive—or if you just want to round out a pasta dinner for the family on a weeknight. Keep the pepper mill nearby when you serve the farinata; it’s best with an almost perverse amount of freshly ground black pepper. You can buy chickpea flour at health food stores, Italian markets, Middle Eastern stores, and specialty food shops.
