Poached Whole Zucchini with Lemon and Olive Oil

Poaching is not a common preparation here in the U.S., but in season all over Italy you will be served zucchini cooked this way, simply seasoned with salt and olive oil. It is a perfect method when excellent zucchini are abundant—convenient to do the cooking ahead. Let the zucchini cool and you can serve them many delicious ways—as an appetizer, a side dish, or the centerpiece of a summer salad. (See below for some good ideas.) You can expand this recipe as much as you want for large parties.

Zucchini and Scallions with Vinegar and Mint

Here is another unusual preparation of zucchini that will heighten your appreciation for a wonderful vegetable that is often abundant and underused. It’s my simplified version of a traditional method—in escabesce—in which sautéed zucchini is marinated in vinegar with fresh mint. Here, zucchini and scallion slices caramelize slowly in a skillet, are quickly coated with sizzling vinegar, and are tossed with fresh mint. The resulting layers of flavor are distinct but harmonious. This is a versatile addition to your repertoire of fresh-from-the-garden recipes. Made ahead and served at room temperature, it’s a lively side dish all summer long, especially good with anything off the grill.

Grilled Corn and Figs with Balsamic Reduction

You probably have enjoyed grilled corn; you may or may not have tasted a grilled fresh fig. I’m almost sure, however, that you never had them together in one dish. But when late summer brings them to market at the same time, I hope you will try this recipe. It’s a simple one to do ahead: you grill the corn on the cob and then grill the figs (they take barely a minute). You slice off the corn kernels, toss them with the figs, and serve the dish at room temperature. The golden vegetable and dark fruit are a great-tasting and pretty combination just as they are, but if you happen to have some Drizzling Sauce of Balsamic Vinegar already made (or a bottle of balsamic vinegar to reduce), it’s definitely worth applying the final swirl of sauce. The acidic tang sets off the sweetness of all the sugars in the corn and figs, already intensified by the heat of the grill. You can use either a gas or a charcoal grill for this, but keep the fire moderate (and pay attention, especially with the figs) so the sugars are caramelized, not burned.

Two-Minute Fresh Tomato and Basil Sauce

This is a fine fast sauce for Shrimp and Tomato Ravioli and Simple Ricotta Ravioli (preceding recipes) as well as for Potato, Leek, and Bacon Ravioli (page 186). Make the sauce just before the ravioli come out of the pot, for the freshest taste. You should definitely peel the tomatoes for this: see my method on page 261.

Mushroom Ragù

This is a great vegetarian sauce, very complex and satisfying. It’s excellent for pasta, baked in a lasagna or polenta pasticciata, cooked into risotto or as a condiment for grilled steak or fish. The mushrooms you can buy at the supermarket will make a fine sauce; if you have fresh wild mushrooms it will be even better. In either case, dried porcini provide a key element in this sauce (and many others). On using dried porcini, see box on facing page.

A Smooth Sauce from a Couple of Tough Veggies

Your family will love this fresh flavored purée and won’t guess that it was made from what some consider scraps-the stubs from asparagus stalks and the thick green tops of leeks. And if you hate to throw away tasty, usable food, as I do, you will feel virtuous. The stubs of fresh, tender, skinny asparagus are best for this-don’t even bother if the stubs are dry, white, and woody. Likewise, use only fresh, flexible leek greens here-it’s OK if the leaves are firm and thick but not if they’re wilted, old, or hard as leather.

Simple Tomato Sauce

I don’t call this sauce “simple” because it is dull in any way. It is a wonderful sauce, lightly textured but richly flavored, sweet and tangy like good tomatoes, and so versatile that I consider it a kitchen staple, one of the sauces that I always have in the freezer. All you need are canned tomatoes; a small amount of onion, carrot, and celery; and salt, peperoncino flakes, and two bay leaves. Then the sauce should mellow for a few hours if possible before using.

Frantoiana

This is a traditional Tuscan soup from the area of Arezzo, made with bread grilled over an open fire and virgin olive oil, unfiltered, straight from the press—the frantoio. Believe me, a pot of beans never tasted this good. As bread is a principal ingredient here, use one with fine flavor, preferably an artisan-baked loaf that has great crust and an airy crumb with lots of holes. Old bread—pane vecchio—is best, because it is already dry, but day-old or even fresh bread can be used.

Long-Cooked Celery Root Salad

It is so simple to transform a hard, homely celery root into a lovely salad with delicate taste and texture. Just drop the big root—a softball-sized unpeeled round—into a big pot of water, and let it cook for an hour or more. This technique retains and mellows the root’s wonderful flavor, and makes it easy to peel and cut it up too. Dress this simply, or take the salad in a different direction (see variations).

Cooked Spinach Salad

Raw spinach salad can be delicious, but, in my opinion, a brief cooking—really just a dip in boiling water—brings out the vegetable’s best qualities. Use really young, tender spinach for this salad. It’s easy to find baby spinach in plastic packs these days, but whenever you can—especially in springtime—buy clusters of tender leaves with tiny reddish stems joined at the roots, as they were plucked from the earth. Trim only the hairy tip of the roots, and cook the leaves and stems still together. Make sure you wash them several times, since dirt lodges between the stems.

Roasted Black Olives and Pearl Onions

This might be considered a salad, but it is a wonderful stuzzichino (something to nibble on). Slow roasting intensifies the flavor of olives and gives them an unusual yet delightful crunch. Tossed with vinegar-poached pearl onions, they make a lively and beautiful salad-condiment. Serve this as an antipasto with cured meats and cheeses, or with grilled meats and fish. It is also a great garnish for sandwiches or with slices of grilled bread. All you need is a plate, a fork, and a glass of good red wine.

Baked Onions from Acquaviva

Cipollotto di Acquaviva, small sweet onions baked with a sprinkle of bread crumbs, is another one of those simple gems from the Antichi Sapori restaurant. Acquaviva is a nearby town famed for the sweetness of its onions. Chef Pietro Zito prepared them for me this way, and they were as sweet as apples. To make these at home, buy any of the sweet onions in the market—such as Vidalia, Walla Walla, or Maui—preferably small, flattish ones, about 2 ounces each. Serve three or four baked onion halves as an appetizer. You can also season and roast the onions on a slow grill, covered—they make a great accompaniment to grilled fish and meat. And very small onions baked Acquaviva style are a wonderful bite-sized hors d’oeuvre.

Onion-Tomato Focaccia

It is hard to reproduce an authentic version of a typical Pugliese bread without the special starter and the wood-burning oven for baking. But, as you will find with the following recipe, this memorable focaccia is one that you can bake successfully at home. The topping of marinated onions and cherry tomatoes is simple and delicious. With this dough as a base, however, you can be creative and make a focaccia with mushrooms, leeks, sausages, and cheese in any combination. Keep in mind, though, that a simple topping, with a few distinct and harmonious flavors, is always more successful than a topping that tries to incorporate too many things. Be sure to season your topping ingredients and, where appropriate, cook and cool them before assembling the focaccia, so they don’t just dry out in the oven.

Raw and Cooked Salad

This recipe is much like the wonderful salad I had at Manfredi’s house. In Palermo, as I mentioned earlier, the insalata cruda e cotta that you can buy at the markets will vary with the season. In America, we can enjoy that same variety, so do not feel confined by these ingredients: use other greens, such as escarole, mesclun, and frisée, together with cooked vegetables such as roasted squash, boiled leeks, boiled beets—anything else you have on hand or enjoy.

Smothered Eggplant and Summer Vegetables

Caponata is a dense condiment of chunky fried eggplant and other vegetables and seasonings, jam-packed with flavor—sweet, sour, and salty all at once. Sicilians make caponata in many variations and enjoy it in countless ways. Here’s a version I love. Use it as a condiment on grilled meats and steamed fish, as a sauce for pasta, or as topping for bruschetta.

Orange and Red Onion Salad

In Sicily, citrus fruits (agrumi) are enjoyed as a savory as well as a sweet, usually served between courses or at the end of a meal. A salad—called pirettu—is made from thick-skinned citrons (cedri). The green rind is peeled off, the center pulp is discarded, and the pith is sliced and dressed with salt, pepper, oil, and a pinch of sugar. Since fresh citrons are hard to find in America, here’s another citrus salad popular in Sicily, especially in the winter months, when oranges are at their best. Customarily it is made with blood oranges—sanguine or tarocchi—and that’s the way I like it best, though any small, juicy oranges will be delicious. Serve this in the Sicilian style, laying the rounds of orange and rings of red onion artfully on a platter with the dressing drizzled over, rather than tossing everything together. It is great as an appetizer, a refreshing end-of-the-meal salad, or an accompaniment to boiled or grilled meats.

Stuffed Escarole

Escarole is a great vegetable that is used much in Neapolitan cuisine, in soups and salads or just braised with garlic and oil. In this recipe, blanched escarole leaves are wrapped around a savory stuffing (as cabbage often is) and baked. Serve these rolls as an elegant antipasto, or as a vegetarian main course.
