Orecchiette

Orecchiette, meaning “little ears,” are small dome- shaped disks. They are the most common shape in Puglia. They’re used in many regional dishes there, including the one that inspired our Orecchiette with Fennel Sausage and Swiss Chard (page 180). Although this shape doesn’t look as intricate as some of the others, it is one of the most difficult to shape, which is probably why so few restaurants make their own. Following our instructions, you can’t fail. To get the desired texture on the surface of the pasta, we suggest you use a plastic cutting board. At the Osteria, we use a wooden cutting board that has been deliberately scored with a knife, which gives the orecchiette the texture we want.

Maltagliati

Maltagliati means “badly cut,” and is so named because the pieces are cut from the sheet of dough in random shapes. In order for us to ensure that the pasta cooks evenly, however, ours only look randomly cut but are actually all cut to the exact same shape and size.

Spaghetti Alla Chitarra

Chitarra means “guitar” in Italian, and the shape, a specialty of Abruzzo, gets its name from the device with which it’s made—a wooden frame strung with metal wire like a guitar. The way it works is that a sheet of pasta dough is pressed down onto the strings, which cut the sheet into long, square spaghetti-like strands. We make chitarra alternately this way and by cutting the sheets with a long knife.

White Anchovy, Tomato, and Spicy Fresno Chiles

This is my answer to that controversial phenomenon of the mainstream pizza world—anchovy pizza. I use marinated white anchovies, which you can get at specialty stores both in the deli and in the fish departments. They are silvery and slightly plump, like sardines—very different from salt-packed anchovies or those sold in cans and jars. I love their flavor and vinegary quality.

Roasted Fresno Chiles

We use these fiery, sweet roasted chiles on the White Anchovy, Tomato, and Spicy Fresno Chiles pizza (page 139) and the Spicy Salami, Mozzarella, and Fresno Chiles pizza (below). If you are making a variety of pizzas, it might be convenient to include these two to use up all the peppers.

Fresh Ricotta and Egg Ravioli with Brown Butter

I’m generally turned off when people describe food as being “sexy,” but sexy is the best description I have for this warm, luscious, pillowy raviolo. The word raviolo is the singular for ravioli, and this is one big, square raviolo filled with ricotta and a raw egg yolk. We are not at all ashamed to tell you that this is a direct rip-off from Michael Tusk, the chef and owner of Quince restaurant in San Francisco. The first time I had it, I thought it was one of the best things I had ever eaten, and for sure the single best pasta dish I’d ever put in my mouth. When our servers bring this to the table, they suggest to the guests that they cut into the raviolo starting from the center so the egg pours out onto the plate into the pool of browned butter that the raviolo sits in. It’s sexy. What else can I say? We recommend you use farmfresh eggs with bright orange yolks. You will need a 3 × 3-inch fluted cookie cutter or a fluted pastry cutter to make these.

Francobolli di Brasato al Pomodoro with Basil and Ricotta Salata al Forno

Francobolli is Italian for “postage stamps,” and that’s what these small, filled pasta shapes look like. They are filled with braised short ribs that we whip with Parmigiano and then top with a simple tomato sauce. The reason for you to make this is the same reason we make it: to use leftover Brasato. This recipe makes more ravioli than you will need for four servings. You can either freeze the remaining ravioli or double the sauce recipe. If you double the sauce recipe, toss the sauce with the ravioli four servings at a time. Ricotta salata is ricotta cheese that has been pressed and salted. The result is a hard, bright white grating cheese with a much stronger flavor than fresh ricotta. Matt got the idea to bake the cheese in a very hot oven, which gives it a smoky flavor.

Fennel Sausage

We use this sausage on our Fennel Sausage, Panna, and Scallions pizza (page 144), Meat Lover’s pizza (page 136), and to make our most popular pasta, Orecchiette with Fennel Sausage and Swiss Chard (page 180). It’s easy to make and keeps well in the freezer. As our longtime sous chef Erik Black used to say, “Making sausage is like making chicken stock. It takes the same amount of time to make a big batch, so why wouldn’t you? You know you’ll end up using it.”

Squash Blossoms, Tomato, and Burrata

Our prettiest pizza, this is the one that customers are most likely to point to when they see it being carried through the dining room. The squash blossoms are laid out over the surface so they bake into the crust, and the pizza ends up looking like a painting. We put the burrata on after it comes out of the oven, and I love the cool creamy cheese on the hot, crispy pizza.

Yellow Wax Beans Stracotto in Soffritto with Salsa Verde

I think the heart and soul of Italian cooking is coaxing the true flavor out of raw ingredients, and that’s what we do with these beans. Stracotto means “long cooked,” and for this recipe, yellow wax beans, a summer vegetable usually prepared al dente, are simmered long and slow with our deeply caramelized soffritto. You’ll want to make this dish only if you already have soffritto in your refrigerator and when yellow wax beans are in season. You could also use yellow Romano beans.

Salsa Verde

This recipe makes twice what you need for the Yellow Wax Beans Stracotto in Soffritto, but it is one of those things that is difficult to make in smaller quantity. Spoon what you have left over on grilled fish, vegetables, or chicken.

Sautéed Cavolo Nero

Cavolo nero, a variety of kale, means “black cabbage” in Italian and is a staple of Tuscan cooking. It has a distinct, earthy flavor that I love and that complements many of our heartier preparations.

Sautéed Broccolini with Chiles and Vinegar

Using vinegar and chiles in an aggressive way is something Matt picked up from Mario, and I love it. I have a thing for acidic food in general—vinegar in particular. If you were to follow me around the kitchen at Mozza as I tasted various sauces and condiments, what you would hear most often is, “It needs salt” or “It needs acid.” This needs neither. Broccolini, also called baby broccoli, looks similar to broccoli but with longer, thinner stalks and smaller florets. It’s a hybrid between conventional broccoli and Chinese broccoli and is slightly sweeter than broccoli. We also make this dish with Romanesco, an Italian heirloom variety of cauliflower.

Steamed Mussels with Passata di Pomodoro, Chiles, and Herbs

What I like most about this mussels preparation is that they are not simply steamed in white wine, like the vast majority of mussels you see in restaurants. We cook them with a light tomato sauce—and, yes, also white wine—and toss in piles of herbs after the mussels are cooked, so the herbs wilt only slightly. The finished dish manages to be original and familiar at the same time. It also couldn’t be easier to make.

Brussels Sprouts with Sherry Vinaigrette and Prosciutto Bread Crumbs

Brussels sprouts get a bad rap. People say they hate Brussels sprouts more than any other food, other than lima beans; in both cases, I believe the reason is that the vegetables are so rarely prepared well. We sear our Brussels sprouts so they get nicely browned while maintaining their unique texture and vibrant green color, then we toss them in sherry vinaigrette and top them with bread crumbs laced with prosciutto and herbs. Judging by the number of people who absolutely love these, I would say we have converted many a Brussels sprout hater with this preparation. The recipe for the prosciutto bread crumbs makes about 1 cup, which is more than you will need for this dish, but since it calls for such a variety of herbs, it seems silly to make a smaller portion and have so many herbs left over—better to have the bread crumbs left over. They are delicious sprinkled on any roasted vegetables. If you don’t have time to prepare the bread crumbs, the Brussels sprouts are still delicious without them.

Polenta

Polenta, which is cooked cornmeal, takes the place of mashed potatoes at the Italian table as a comforting, starchy side dish. To cook polenta correctly, you have to go by the texture, not the time, as the cooking times will vary depending on how the corn was milled and how fresh it is. We start with a whole-grain polenta, Anson Mills Rustic Polenta Integrale. Like any whole grain, it still has the germ and the bran, which gives it a more earthy flavor. It takes about three hours to cook so it’s definitely something to save for when you’re in the mood for slow cooking. We cook the polenta—with all that stirring that polenta is so known for—until you can’t feel the grain under your teeth. The texture of the finished polenta is almost custardy. Matt uses Italian sparkling mineral water to make polenta because he thinks the minerals in the water add to the flavor of the polenta. When making the polenta to serve Brasato al Barolo with Polenta and Horseradish Gremolata (page 230), omit the Parmigiano-Reggiano in this recipe.

Lentils Castellucciano

We exclusively use Umbrian lentils in our restaurants, which are smaller than common brown lentils and are various shades of brown to green. Castelluccio, the town where the lentils come from, is a two-and-a-half-hour, winding, hilly drive over the Apennine Mountains from my house. Once you get there, you don’t feel like you’re in Umbria—or Italy—at all. There are no sunflowers. No rolling green hills. The landscape is crater-like, with fields and fields of flowering lentils. It feels more like you’re on the moon, or in Oz. When I visited with a group of friends, we ate lunch at the one trattoria in town. Of course they offered lentils, and I was surprised to find them cooked in a much heartier way than I had ever seen lentils prepared before, almost like a stew or a ragù, with pork sausage, another delicacy of that region. This is Matt’s rendition of the lentils we had that day.

Long-Cooked Broccoli

When you read “Long-cooked Broccoli,” note that this is distinctly different from the soggy, overcooked broccoli that you might remember from the school cafeteria. Here, the broccoli is cooked deliberately long and slow—almost poached—in olive oil with a lot of onion and garlic. Cooking it this way makes the broccoli tender, buttery, and flavorful. It’s one of my all-time favorite vegetable preparations. We use it to top the Long-cooked Broccoli, Caciocavallo, and Peperoncino pizza (page 146), and we also offer it as an antipasto at the Pizzeria.

Pancetta-Wrapped Radicchio al Forno with Aged Balsamico Condimento

The perfect example of how good a few simple ingredients, combined and prepared correctly, can be. When we can get it, our preferred variety for this is radicchio di Treviso, which has an oblong head. The roasted heads look so pretty lined up on a platter that they make the perfect addition to an outdoor meal served family or buffet style. As always, the quality of the balsamico you use is essential to the quality of the finished dish.

Meatballs al Forno

When I was building the Pizzeria menu, I wanted it to be a true Italian pizzeria experience with a nod to the Italian-American pizzerias that I grew up eating in. With those American pizzerias in mind, I felt that we had to offer meatballs. What I really wanted to serve was a meatball sandwich, but as strongly as I argued for it, Matt argued against it. He softened over time and finally, two years after the Pizzeria opened, I got my meatballs—not as a sandwich, but as an antipasto: a bowl of meatballs served with buttered semolina toast on the side. Today they are the most popular antipasto in the restaurant.
