This noodle dish is very gratifying on hot summer days when you want to eat something light, healthy, and refreshingly cold. The crisp, clean texture of the cucumber combined with the spiciness from kimchi, the tang from the rice vinegar and a subtle sweetness from the sugar makes the dish so good. The noodles are served over a bed of ice, then topped with this spicy salad-like mixture.
Rosemary Garlic Red-Wine Vinegar
Flavored vinegars can be used to enliven dressings and marinades, finish pan sauces, or pickle vegetables--and they make wonderful gifts. Once the steeping is completed, these vinegars keep for several months. (Garnishes and other solids left in the jar, however, may discolor or break down.)

The acidity of the vinegar and grapefruit is balanced by the quince, apple, and pear flavors in this French-style chutney. Bananas add creaminess. Use ripe fruit for best results.

"Because I love to cook, I'll use any excuse to make dinner for my family or friends.
