Cornish Game Hens with Pancetta, Juniper Berries and Beets

Sauté any remaining greens from the beets to serve on the side with the lentils with port-glazed shallots . A Moulin-à-Vent is the wine of choice; purchased cheesecake topped with cherries marinated in brandy and sugar is a scrumptious finale.

Stuffed Mashed Potatoes

Causa Limena Editor's Note: This recipe and introductory text are excerpted from The Exotic Kitchens of Peru, by Copeland Marks. We've also added some tips of our own below. For a complete guide to Peruvian cuisine, click here. This appetizer, a popular national dish, is from Lima, the capital city of Peru, which has metropolitan and modern ideas. The dictionary does not reveal how the word "causa” came to be applied to a concoction, albeit a delicious one, that features cold mashed potatoes. A causa is considered a light lunch or snack, a most appealing dish that is often served at weddings or other celebrations.

Chicken Tetrazzini

We used grocery rotisserie chickens for this recipe, but leftover turkey from the holiday table works equally well.

Jellied Chicken and Coriander "Terrine"

Terrines — molded preparations of meat, fish, or vegetables — are wonderfully rich and dense. This chicken variation, with a fraction of the calories and fat of a traditional terrine, draws its structure and moistness from aspic and its lively seasonings from China. To accompany it, try Japanese soba noodles — their springy texture contrasts with the terrine's smooth gel and tender chicken — and fast-cooked snow peas , for crunch.

Chicken Pouqui

An easy herbed cream sauce accents sautéed chicken breasts.

Turkey Cutlets with Pan Salsa

Can be prepared in 45 minutes or less.

Game Hens with Honey, Vinegar and Spice Glaze

The sweet, sour and spice combination, is common all over the Mediterranean and is often found in Catalan cuisine, especially with poultry and game birds. Serve this impressive main course with crisp roasted potatoes and a dry white Penedès wine.

Tacchino Ripieno

Turkey Stuffed with Chestnuts and Prunes This is definitely my favorite way to do turkey because it never comes out dry. My wife, Susi, is always upset when she sees me prepare this abstract-looking sausage of a gobbler, but she's happy when she eats the tender and succulent meat and stuffing, all encased in a crisp and well-seasoned skin. The advantages of this method are twofold: it's in the oven only for an hour, freeing up cooking space for other dishes; and carving is simplicity itself — just cut straight through, like a regular roast.

Crunchy Chicken Salad with Shiitake Mushrooms, Spicy Sesame Dressing and Peanuts

Cabbage, cucumbers, carrots, and lots of fresh mint accent the salad. Offer chilled beer or a fruity white wine alongside.

Cornish Hens with Maple-Mustard Glaze

Wild rice and winter squash are perfect with this easy and elegant entrée.

Roast Chicken with Tarragon

If the excess fat essential to this recipe has been trimmed away from the tail end, ask your butcher for some extra chicken fat, which will be used to help brown and crisp the skin. Uncork a California Pinot Noir. See how to cut up a whole chicken (also called "jointing a chicken") in our streaming technique video.
