Crab, Mango, and Mint Nori Rolls

To make the nori rolls in this recipe we used a bamboo sushi mat*, available at the sources noted below. Alternatively, a 9-inch square of heavy-duty foil can be used.

Double Chocolate Cherry Torte

This torte has a crisp top that shatters when cut and a fudgy tart cherry center.

Vanilla Ice Cream with Warm Cherry Sauce

This lovely dessert combines the flavors of cherries jubilee in an easier rendition of the classic recipe.

Cranberry, Ginger and Peach Preserves

This southern version of the holiday cranberry sauce includes peaches, one of the region's favorite fruits.

Mixed Greens with Plums and Marinated Goat Cheese

Marinate the cheese for a couple of hours, then assemble the salad just before serving.

Sorbet and Ice Cream Terrine with Blackberry Compote

A rainbow of four purchased sorbets plus vanilla ice cream make this beauty one of the easiest desserts ever. Prepare the stunning terrine up to four days ahead.

Mango Coconut Ice Cream

In Thailand, mangoes often appear on the table for dessert — served both on their own and incorporated into a sweetened sticky rice. If you can't get your hands on really good mangoes, you'll find that canned mango purée delivers the best flavor for this ice cream. However, many canned brands taste like peaches, so we recommend Ratna brand, which uses Alphonso mangoes, an Indian cultivar renowned for its bright orange flesh and very intense flavor. Ka-Me brand is a runner-up — the recipe will work fine, but the color and flavor will not be as intense. Active time: 45 min Start to finish: 17 3/4 hr (includes chilling and freezing)

Warm Spiced Plums with Honey Cream

Can be prepared in 45 minutes or less, but requires additional unattended time.

Spicy Pickled Plums

These plums nicely complement pork or lamb chops. You can slip off the skins before eating if you like.

Sour Cherry Crostata

This beautiful tart features a pastry the Italians call pasta frolla — the texture of the dough is more like cookie dough than traditional French-style pastry. The lattice crust is surprisingly easy to make because it doesn't require weaving the strips. Active time: 1 1/2 hr Start to finish: 5 hr

Caramel-Almond Torte with Spiced Mango Compote

The torte and compote are each great on their own, if you have time to make only one of them. A kosher-for-Passover sorbet would be nice with this dessert.

Watermelon and Mango with Lime

Active time: 25 min Start to finish: 45 min

Grilled Chicken Palliards with Nectarine Chutney

Active time: 15 min Start to finish: 25 min

Miniature Almond Cakes with Sugared Cherries and Kirsch Cream

Active time: 45 min Start to finish: 2 hr

Grilled Nectarines with Honey-Balsamic Glaze

When using an outdoor grill, add a handful of fresh charcoal to the embers after serving the main course; when it's time to cook the nectarines, the fire should be at the right temperature. Remember to brush the grill clean before adding the fruit. Sour cream is a good substitute for the crème fraîche.

Roast Five-Spice Duck with Honeyed-Mango Chutney Sauce

The business card from Tante Louise reads: "A very special restaurant"—and it truly is. This romantic spot has been going strong for 27 years. Owner Corbin Douglass is known for fulfilling all sorts of requests, from ensuring that guests are seated at their favorite table in front of the fireplace to presenting an engagement ring on the dessert cart. Chef Duy Pham changes the contemporary French menu seasonally. The following dish was inspired by roast Peking duck, a Sunday tradition in Pham's family.
