Incredible French Crunchy Salad
That’s what Mom and I called it, this light, delicious midday meal in Saint-Émilion, France. It’s a wonderful light supper in warm months and a good lunch in any season. To make this salad into a movable feast, serve with French ham, sausage, or pâté, cheese, and a baguette. Oh, and plenty of Saint-Émilion wine.
Zucchini and Bow Ties
Serve with tomato salad.
Wild Cream of Mushroom Egg Noodle Bake, Hold the Canned Soup
Serve with a green salad.
Pistachio Pesto
Serve all of these variations with tomato and onion salad or mixed greens and some good bread.
Tomato-Basil Pasta Nests
A pretty basic version to get you started.
Broccoli Frittata with Goat Cheese and BLT Bread Salad
This meal is another B, L, D: good for Breakfast, Lunch, or Dinner.
Fall Minestrone
More like fall-in-love-with soup.
White Beans, Pancetta, and Pasta
This is a mix-up of pasta e fagioli and minestra. Again, my indecisiveness is at play.
