Rice Cake Soup

Grilled Oysters with Mango Pico de Gallo and Red Chile Horseradish

I was taught to grill oysters on one of my trips to the Pacific Northwest. This is one of those dishes where organization is imperative. Because the oysters cook for only a few minutes, you've got to have the garnishes ready before you put the shells on the grill. The mango pico de gallo and the red chile horseradish are hot and sweet on your tongue. If you think that the red chile horseradish looks too spicy, don't worry, for the sweet mango provides just the right cooling sensation. The oysters actually "pop" when they are cooked and make for a great presentation.

Orange Lentil Soup (Shorabat Adas)

Cumin lends a unique flavor and aroma to this popular Ramadan soup. Sometimes, for a heartier version, I add Kafta balls just after I purée the lentils and let them cook together. Lemon juice is thought to aid the body in absorbing the iron in the lentils, so I always squeeze some into each serving—it brightens the flavor, too. Shorabat Adas is delicious the next day; just add a little water to the cold lentils, which will be very thick, before reheating it. You can freeze it, too, in a tightly covered rigid container for up to 6 months.

Hot Crab Dip

Recipe from the kitchen of Felicia Gray, age 12 Many crab dip recipes call for imitation crabmeat, but there's no place for "krab" here. Only real lump crabmeat makes it taste best. Serve it while it's hot with crackers, bite-size pieces of bread, or veggie sticks. It can also be presented in a bread bowl and served with a tray of fresh broccoli, carrots, zucchini, or crackers.

Vegetable Medley in Garlic-Chile Sauce

Despite the name, this is unrelated to chileajo con puerco except for the presence of the chile and garlic that give it its name. It is one of the classic Oaxacan street snacks, especially at fiesta time, when food stands are crowded all around the beautiful Oaxaca City Zócalo (town square). Here you find women selling this wonderful specialty — a garlicky, spicy vegetable melange on a crisp fried corn tortilla, topped with a delicious combination of crumbled cheese, thinly sliced onion, and oregano. It's inspired. If you can find amarillo chiles, use a combination of them and the less characteristic, more available guajillos. Do not griddle-dry the amarillos, as they scorch easily. The tortillas used for chileajo are very small, about 3 inches in diameter. If you cannot find such a thing, cut out 3-inch rounds from larger commercial corn tortillas.

Crab Cocktail

While I love a shrimp cocktail, this I think has a slight, elegant edge. The hot, green mustardy horseradish, the wasabi paste, is not so hard to find these days but you could always substitute a small dollop of Colman's English mustard in its place I suppose. Similarly, you could shred some little Boston lettuce should you have difficulty locating the Chinese leaves.

Heirloom Tomato Soup with Arbequina Olives and Shaved Fennel

Although this soup has a robust tomato flavor, it is surprisingly satiny and creamy, a result achieved by blending cucumber into the tomatoes. Chopped jalapeño provides a refreshing bite, shaved fennel adds crunch, and arbequina olives contribute both earthiness and meatiness. A final drizzle of olive oil is all that is needed to push this splendid dish over the top.

Tuna-Stuffed Eggs

Uova Ripiene di Tonno Recipes are some of my favorite souvenirs of memorable dining experiences. Whenever I make these eggs, for example, I am reminded of the first time I ate them at Belvedere, a favorite restaurant in La Morra in Piedmont. The owner told me what was in them, and at home I experimented with the proportions of the ingredients to get the flavor I remembered.

Tapenade

Utensils needed: Heavy-bottomed saucepan; four 8-ounce containers with lids, sterilized
Cooking time: Approximately 20 minutes
Storage: Refrigerate in an airtight container up to 3 weeks.
Serving suggestions: Use as a condiment for meat, poultry, or fish; as a dip for crudités; or as a topping for croutons, baguette slices, or sliced cooked potatoes.

The Cabbage Soup Diet

Wonderfully pure, a "vat" of this stuff lasts about a week, depending on how much you eat each day. Eat as much of the soup as you like, as often as you like.

Mangalore Fried Shrimp

Jhinga Mangaloree This dish is from the southern Indian coastal state of Karnataka, where seafood is an important part of the diet. The shrimp has extraordinary flavor. I sometimes vary the recipe by adding 1 1/2 tablespoons unsweetened shredded coconut along with the mustard seeds, or 2 to 6 chopped small fresh green chiles with the scallion. Serve with green chutney or lemon wedges, lemon rice, and a raita.

Mushroom Soup

This is a ridiculously easy soup to make. It's tasty and durable, and it gets even better overnight.

Katy's Dates with Ancho Chili Oil

I first met Katy Sparks in the flesh at New York City's French Culinary Institute. We were both there to teach on a mentorship program, and since I was already wild about the food at her restaurant, Quilty's, I made a beeline for her and insisted we become friends and spend lots of time eating together. For fun, Katy and I have given several cooking classes working as a duet; she made these dates at our first class together. They are just the kind of thing I find irresistible — sweet, crunchy, juicy, spicy — you name it, they've got it. Once you have the ingredients, they're very easy to put together.

Mackerel "Herring Style" with Cucumber-and-Bibb-Lettuce Vinaigrette

David Bouley: Mario and I wanted to put fresh herring on the menu, but we couldn't find a consistent source for the best product from the North Sea. So we came up with this dish using mackerel, an underused fish in this country. When you marinate the raw mackerel, it becomes very mellow in flavor. It's a clean-tasting fish, not a bit "fishy" or strong. We marinate the mackerel in Bibb lettuce and cucumber juices, then mix it with beet and apple for sweetness and a little crunch. It's both light and refreshing.

Three-Cheese Phyllo Triangles with Onions and Yogurt

Onions, cheese, and yogurt pies abound in the north of Greece, especially in shepherds' communities where dairy products are daily staples. This recipe is culled from that tradition, but instead of preparing a whole sheet pan with homemade phyllo, I have reworked it to make it accessible and more in tune with the meze style of eating.
