BAPS (Browned Apple Patties)—A Nutritious, Low-Glycemic Dessert.

Cooks' Note

Eat this dessert following a meal of fish, chicken, or low-glycemic carbohydrates. If you have really had a modest size, low-fat meal, serve the warm patties with 1 scoop of no sugar added vanilla ice cream.

Recipe information

  • Yield

    serves 4

Ingredients

2 medium-size firm cooking apples, peeled, cored, and grated
1/2 cup chopped pecans, walnuts, or almonds
3 tablespoons stone-ground whole-wheat flour
4 packets fructose sweetener
1/4 teaspoon fresh lemon juice
2 tablespoons butter

Preparation

  1. Combine the apples, nuts, flour, fructose sweetener, and lemon juice in a bowl. Mix and form into 4 patties. Melt the butter in a medium nonstick skillet over medium-low heat.
