Smoky Chipotle Chili Con Queso Mac

Ingredients

Swap

1 1/2 pounds ground beef sirloin for the chicken Ground chipotle powder for the chili powder
2 1/2 cups shredded smoked Cheddar for the regular Cheddar

Add

1 14-ounce can diced fire-roasted tomatoes (such as Muir Glen brand), drained
4 scallions, chopped, for garnish

Preparation

  1. Step 1

    Brown the beef, seasoned as you would the chicken in the master recipe, #153, swapping the chipotle powder for the chili powder. Continue with the recipe, swapping the smoked Cheddar for the Cheddar.

    Step 2

    Stir the tomatoes into the cheese sauce once the cheese has melted. Garnish bowlfuls of chili con queso mac with chopped scallions.
