CORN FLAKES MASHED POTATO CASSEROLE

Favorite side dish for the holidays. Definitely not low-carb/low-fat.

Ingredients

6-7 medium potatoes
1/4 c butter
1 pint sour cream
1 can cream of chicken soup
3/4 c chopped green onions
1 1/2 c grated cheddar cheese
1 c crushed corn flakes
2 T butter
Bake at 350 degrees for 45 minutes

Preparation

    1. Cook potatoes, mash in food processor or with potato masher
    2. Heat in pan: cream of chicken soup, cheddar cheese
    3. Add to heated soup mixture: green onions. Then mix in potatoes and sour cream and pour into casserole.
    4. Melt butter with cornflakes and layer on top
    5. Bake 350 degrees for 45 minutes
