SURIMI SALAD (IMITATION CRAB SALAD)

This makes a wonderful light meal all by itself served on a bed of lettuce with bread sticks or on 7-grain or whole wheat bread as a sandwich. This can also be used as an hors d'oeurves when placed on melba toasts or crackers such as RITZ.

    Makes approximately 6 servings

Ingredients

1.5 lb package Surimi (Imitation Crab Flakes)
1/2 cup sour cream
1/3 cup mayonaise
1/2 tsp freshed minced garlic
1/4 cup finely chopped green onions
1/2 cup diced celery stalks
Juice from 1 small lemon (1-2 tbps)
1 tsp sugar
1/4 tsp salt
Dash or two of fresh ground pepper

Preparation

  1. Hand knead Surimi in mixing bowl until large pieces are broken down into shreds. Set aside.

    Mix all remaining ingredients in separate mixing bowl until well blended. Add to Surimi and mix well.

    Cover and refrigerate at least 1 hour to infuse flavors. (Can be made the day before and left overnight). Serve chilled.
