Grilled Pizzas with Potatoes and Rosemary
Red potatoes keep their shape well — they don’t disintegrate during cooking — and they absorb the flavors around them, like the garlic and rosemary in these pizzas. The flaky white crystals of Maldon sea salt, which is hand-harvested in Maldon, England, make a beautiful garnish for these pizzas.

Guajillo chiles are flavorful, fruity, and only mildly hot. Here, they are sautéed to impart a smoky flavor, then cooked slowly with tomatoes to soften them. These chiles are not soaked beforehand, which allows them to maintain texture.

For this recipe you will need 3 mini-muffin pans, each containing twelve 1 3/4- by 1-inch cups. Resist the temptation to make the bites in batches because the potato mixture will discolor.

Chicken Cashew Chili
Puréed ancho chilies lend a rich, sweet, and only mildly hot flavor to this chili. To make a hotter dish, do not remove the veins or seeds from the chilies. If anchos or similar dried chilies are not readily available, substitute one roasted and peeled red bell pepper and 1/4 teaspoon dried hot red pepper flakes when puréeing.
