Salad
Mediterranean Farro Salad
This is a hearty meal in a bowl—like an antipasto with the added substance of the earthy grain.
Fregola Salad with Fresh Citrus and Red Onion
Fregola is a toasted semolina pasta that is very popular in Sardinia. You can substitute any small shape pasta, such as orzo, which it resembles, but do make the effort to seek it out at a specialty food shop; its nutty flavor makes this pasta salad really unusual and delicious.
Asparagus and Zucchini Crudi
It’s hard to believe a plate this beautiful is so easy to make. Crudi means “raw” and the freshness of raw vegetables is especially welcome as an accompaniment to a heavier pasta. The key to this dish is creating long, graceful ribbons of the raw zucchini; they should look almost like pale green fettuccine noodles.
Roman Summer Salad
Midway between an antipasto plate and a salad, this is typical of the kind of salads you’ll find in Rome, which rarely feature a lot of lettuce. Don’t be put off by the anchovies; they are chopped fine and contribute a big kick of flavor and saltiness. Serve it along with a plate of sliced deli meats for a picnic or fall lunch.
Grilled Eggplant and Goat Cheese Salad
I always prefer to use Japanese eggplants when I can because I find they are less bitter and don’t require salting the way bigger eggplants sometimes do. This is a very substantial salad and also very good looking, with pretty layers of eggplant, cheese, and nuts.
Fennel Slaw with Prosciutto and Pistachio Pesto
Fennel is best served from fall to spring, when it’s in season, and there are a million different ways to take advantage of its crunchy sweetness. Here, the raw bulbs are sliced and dressed with a nutty pistachio pesto and salty bites of prosciutto. The flavors just pair so well together.
Cantaloupe, Red Onion, and Walnut Salad
In Sardinia melon, watermelon, and other sweet fruits often find their way into salads. Watermelon is used most commonly, but I find it’s easier to get good cantaloupe year-round. This is very fresh tasting and refreshing, and because I always like a little crunch in my salads, I’ve added some toasted walnuts. Sometimes I add some grated Pecorino cheese to this as well. Serve this after the meal as a palate cleanser before—or instead of—dessert.
Fresh Tomato and Goat Cheese Strata with Herb Oil
For entertaining I usually prefer dishes that can be made ahead of time, but I make an exception for this one. It does need to be assembled at the last minute; but when you want something particularly beautiful to start a small dinner party, it’s worth the extra effort. The flavor of mint really shines through and the colors are stunning together, especially if you use a mix of heirloom tomato varieties.
Caesar Salad Burger
The classically American Caesar salad has taken on a life of its own. Forget about it as a starter—this salad has become a meal on menus across the country with the addition of chicken, steak, or shrimp. Why not take it one step further and put the salad on a burger? Refreshing romaine lettuce lends its crispness to the burger, but the zesty dressing and extra Parmesan cheese are what really make this so identifiable flavor-wise and so tasty. All of the classic components of Caesar dressing—garlic, Worcestershire sauce, anchovies (these can be your secret, but their rich saltiness is essential)—morph into a slightly spicy mayonnaise perfect for spreading all over this new way to make a meal out of Caesar salad.
Chocolate Balsamic Vinaigrette
What better way to indulge in a little chocolate than by adding it to a plethora of healthy greens, pine nuts, and feta cheese? You’ll be looking for an excuse to eat your vegetables with this surprising twist on vinaigrette.
Black Beans and Rice
To jazz up black beans and rice, add the exciting flavors of rich olive oil, tangy lime juice, and assertive garlic.
Grilled Tuna Niçoise
Here’s a warm version of the popular French salade niçoise. Très bien!
Fresh Herb Couscous Salad
The fresh herbs in this salad add an exotic flavor that’s reminiscent of Mediterranean favorites.
Vegetarian Taco Salad
Such a simple meal and such a great taste! The fresh and tangy blend is wonderful by itself or with whatever additions you have on hand. Check your refrigerator for tomatoes, bell peppers, chiles, or corn to add to this versatile salad.
Beef Salad with Vinaigrette Dressing
Here’s an interesting lunch or light supper salad that uses cooked eye-of-round roast, such as leftovers from Tuscan Braised Beef (page 172), and your choice of two dressings. You can even use leftovers of the leftovers tomorrow—any extra salad makes a great filling for sandwiches.
Salad Greens with Chicken, Mandarin Oranges, and Asian Vinaigrette
A small amount of intensely flavored dressing goes a long way in this brilliantly colored salad.
Thai Beef Salad
Turn leftover roast beef such as from Tuscan Braised Beef (page 172) into a taste adventure by adding Thai-style dressing.
