Shrimp Cakes with Chili-Lime Cream Sauce

Bonnie Hillard of Washington, DC, writes: "My sister and I stumbled across Sansei Seafood Restaurant & Sushi Bar at the end of a day of shopping at the Kapalua Shops on Maui. We'd read about this popular spot in a guidebook, and we couldn't resist stopping in for dinner. Everything was fabulous, especially the shrimp cakes we shared."

Nuked Nachos

This is the ultimate party dish because you can add it to your spread in no time flat. Almost everything for this mini meal comes out of a bag or a can, but brightening up the dish with some fresh cilantro makes it taste and look really fresh. A few minutes in the microwave makes everything warm and gooey.

Balsamic-Grilled Radicchio with Shaved Pecorino

Chef Michael Presnal of The Federal Restaurant in Agawam, Massachusett, writes: "The recipe here was featured on one of my first menus as a chef, before I got into the kind of complex cooking I do now at The Federal. That was over ten years ago, but I still love making this dish at home. It calls for just a few fresh ingredients and takes only a couple of steps." Serve as a side dish or first course.

Pasta with Anchovies, Currants, Fennel, and Pine Nuts

Chef Sal Passalacqua of Dimaio Cucina in Berkeley Heights, New Jersey, writes: "My father's family is from Sicily and I spent my teenage years there, so that's where a lot of my culinary influences come from. At first glance, Sicilian cooking seems very simple, but that simplicity depends on using the freshest ingredients and often the combination of sweet and tart flavors. The anchovy pasta is a perfect example." This dish is a variation on the traditional Sicilian pasta made with sardines. Anchovies have replaced the sardines, but the flavors are still very authentic.

Poached Oysters in Fennel-Saffron Soup

Serve this with plenty of crusty bread.

Mulligatawny Soup

Liz and Kurt Gruber of Bellevue, Washington, write: "We really enjoyed the mulligatawny soup we had at Shamiana in nearby Kirkland. Could you get the recipe?"

Roasted Red Pepper with Feta Dip

Crudités and toasted pita triangles are good dippers for this Greek mezede.

Ciabatta Pizza with Gorgonzola, Walnut Pesto, and Pears

The pears give this pretty pizza fresh flavor and texture.

Cauliflower Soup with Almonds

This soup looks thick but doesn't taste at all heavy. In fact, it has an almost billowy texture, but with enough substance to still be satisfying. The addition of just a small amount of toasted almonds adds some crunch to the equation.

Oysters with Champagne-Vinegar Mignonette

In this elegant introduction to dinner, oysters are paired with Champagne grapes, whose sweet juice balances the sharpness of the vinegar in the mignonnette.

Peach and Tomato Gazpacho

We use ice in this recipe because it gives the gazpacho just the right chill without the soup having to be refrigerated for any length of time. If you don't have precrushed ice, crush about 1/4 cup ice in a blender.

Ziti with Roasted Peppers, Green Olives, and Spicy Salami

Think of this flavorful medley as an antipasto pasta. Add sides like tomato bruschetta and a romaine-radicchio salad for a fantastic summer supper. What to drink: A bold Sangiovese or Rioja.

Grilled Zucchini and Eggplant Pizza with Tapenade and Fontina

Ultra-creamy Fontina cheese and a layer of black-olive tapenade give this an unctuous, satisfying quality that is usually missing from other veggie pizzas. What to drink: Dry rosé or a spicy Rhône-style red.

Watermelon and Cucumber Gazpacho

This fresh, colorful soup makes a great summer starter.

Oven-Dried Tomato Tart with Goat Cheese and Black Olives

Oven-drying the tomatoes before baking the tart concentrates their sweetness and prevents juices from softening the filling. This makes a great summer starter, light lunch, or supper. What to drink: A glass of dry rosé to echo the Provençal flavors of the tart, or a New Zealand Sauvignon Blanc.

Classic Caponata

Doris Jacobson of Anaheim, California, writes: "I host many family gatherings, and I always get requests for my lemon bars and my caponata appetizer. They're easy to make and perfect for picnics at the beach or an evening at the Hollywood Bowl. Plus, both recipes can be made ahead. Fresh basil brightens up this traditional eggplant spread. Serve it on baguette slices or crackers.

Bell Pepper, Red Onion, and Goat Cheese Pizza

Marielle Ainsworth of Roswell, New Mexico, writes: "I'm a vegetarian, but my husband isn't, so I'm always looking for recipes that will make both of us happy. I came up with the goat cheese pizza because it combines things we both love —cheese and veggies. If you're not a fan of goat cheese, whole-milk mozzarella, Fontina, or Gorgonzola can also be used.
